Morels are wild mushrooms that typically grow for a brief period during spring season. The strong earthy flavor and unique texture these mushrooms possess coupled with their rare availability makes them the most sought after variety of mushrooms in the whole mushroom family. But since these mushrooms are also known to contain some toxins which might lead to some deadly allergic reactions if they’re consumed raw.

Morel Mushroom Bisque:

Preparation Time: 5 minutes

Cooking Time: 15 minutes

Serves – 4

Ingredients:

Fresh Morel Mushrooms – 1 Pound
Large onion (chopped) – 1
Garlic cloves – 5
Chicken stock – 2 cups
Milk – 1 cup
Butter – 2 tbsp
Refined flour – 2tsp
Black pepper powder – 1/4 tsp
Juice of one lemon
A pinch of dehydrated thyme
Salt as per taste

Morel Mushroom Bisque

Preparation:

Mix fresh morel mushrooms with juice of one lemon in a bowl and keep aside.

Method:

Step 1

Melt butter in a saucepan and tip the mushrooms, chopped onion and crushed garlic cloves in the pan and cook for a few minutes till the mushrooms are almost done.

Step 2

Dust the cooked mushrooms with refined flour and saute for another 30 seconds while stirring in between.

Step 3

Add chicken stock, milk, salt and a pinch of dehydrated thyme and let the soup simmer for atleast 10 minutes. Season with freshly ground black pepper and serve with toasted bread.

Morel Mushroom Risotto:

Preparation Time : 5 minutes

Cooking Time : 20 minutes

Serves : 4

Ingredients:

Morel Mushrooms (fresh) – 2 cups
Risotto Rice – 2 cups
Small onion (finely chopped) – 1
Butte – 1 tbsp
Garlic cloves (smashed) – 2-3
White pepper powder – 1/4 tsp
White wine – 1/2 cup
Grated parmesan cheese – 1/2 cup
Chicken stock – 4 cups
Chopped parsley for garnishing
Water – 1 cup
Olive oil
Salt as per taste

Morel Mushroom Risotto

Preparation:

Wash and immerse fresh morels in warm salted water for five minutes to remove any worms hidden inside the frilly covering. Drain the water, rinse the mushrooms again in cold water and set them aside.

Method:

Step 1

In a large saucepan bring the chicken stock and water to boil and set it aside.

Step 2

In another pan heat some butter and olive oil and saute mushrooms, onion and garlic for 8 minutes.

Step 3

Add white pepper powder, salt, white wine and rice into the pan and cook till they turn opaque. When you add rice you have to keep stirring the rice in between till the time they’re fully cooked.

Step 4

Add boiled chicken stock a cup at a time over the rice and stir. Keep adding the stock and keep stirring continuously till the rice is completely cooked and the risotto achieves a creamy and thick consistency.

Step 5

Garnish with grated parmesan cheese and sprinkle chopped parsley before serving.

Fried Morel Mushrooms:

Preparation Time : 5 minutes

Cooking Time : 8 minutes

Serves – 4

Ingredients:

Fresh morel mushrooms – 1 pound
Refined flour – 1 cup
Garlic powder – 1 tsp
Black pepper powder – 1/4 tsp
Egg – 1
Milk – 1/2 cup
A pinch of thyme
Oil for frying
Salt as per taste

Fried Morel Mushrooms

Preparation:

Wash and clean the mushrooms well and let them dry for 10 minutes.

Method:

Step 1

Beat an egg in a large bowl until smooth. To this add refined flour, milk, salt, black pepper powder, garlic powder ,thyme and whisk this batter making sure that no lumps are formed.

Step 2

Heat oil in a large skillet. Dip the mushrooms one by one in the batter to coat them well and drop in hot oil for frying.

Step 3

Fry the mushrooms till they turn golden and crisp. Transfer the fried morel mushrooms on a paper towel to absorb any excess oil and serve hot with yogurt and mint dip.
