1. Classic Buffalo Wings:
Preparation Time : 10 Minutes
Cooking Time : 45 Minutes
Serves : 4
All purpose flour – 1 1/2 cup
Ground black pepper – 1 teaspoon
Salt – 1 1/2 teaspoon
Paprika – 1 teaspoon
10 wings (cut in half from joints)
Butter – 4 tablespoon
Hot sauce (vinegar based)
Take a heavy saucepan and add vegetable oil to it. Add enough for frying the chicken wings. The wings should float on the oil. Add oil according to that.
Use a large bowl to mix all the ingredients such as flour, paprika, salt and black pepper. You can add cayenne also. Put the chicken wings in this mixture and shake off the excess.
Make sure the oil is hot. Now put the coated chicken wings and fry them for 10-15 minutes. Do not overcrowd the saucepan. The chicken wings should be able to float freely. If you overcrowd, they will stick to each other. Fry the wings in batches. They should be golden brown in color.
Drain the chicken on a wire rack. Make sure the wire rack is placed over a plate. Once the oil drains out, transfer the chicken wings to a bowl.
Take a saucepan and add butter to it. It should be on medium heat. Once the butter melts, add the hot sauce. When it combines, pour this sauce over the fried chicken wings which are in the bowl. Toss the chicken wings to coat it with the sauce. This recipe makes 20 pieces. Your buffalo wings are ready to serve!
2. Bacon-Wrapped Jalapeno Poppers:
Preparation Time : 5 Minutes
Cooking Time : 1 Hour 15 Minutes

Fresh Jalapenos – 20 (2 inch in size)
2 packets of cream cheese – 8 ounces
1 pound bacon (slices to be cut in half)
Preheat your oven to 275 degrees F. Put a wire rack on top of the baking sheet.
Use hand gloves to handle the jalapeno pepper. Slice the jalapenos into half. Cut it lengthwise. Use a spoon in order to take out the seeds and membranes.
Smear a good amount of cream cheese into each half of the jalapenos. Now wrap this jalapeno with bacon. You need to use half slice of the bacon to wrap the jalapenos.
Stick a toothpick in the middle so that the bacon and jalapeno stick together and do not fall apart. Place these on the rack over the baking sheet.
Bake it till the bacon starts sizzling. Your bacon-wrapped jalapeno peppers are ready to eat! Serve them hot.
3. Fish And Chips:
Preparation Time: 15 Minutes
Cooking Time: 30 Minutes
Vegetable oil – 4 cups
All-purpose flour – 3 cups
Cornstarch – 2 tbsp.
Baking powder – 1 tbsp.
Salt to taste
Freshly ground pepper
Wheat beer – 2 bottles
2 eggs – whisked
Cod fillets – 3 pounds
Ready-made tartar dip
For The Chips
3 Potatoes – sliced thinly
Take a pot and heat some vegetable oil in it. It should be a heavy-bottomed pot. The oil should be of 360 degrees F temperature.
Take a bowl, whisk together cornstarch, flour, baking powder, salt and pepper. Add the wheat beer and eggs to it. Whisk together to combine. The batter is done.
Take a plate and put a little flour in it. Dust the fish fillets in flour and then carefully dip each fish in the batter. Shake off the excess batter and place them in the oil. Fry the fish till it turns golden. Fry it 2 minutes each side.
Once the fish is fried, keep it on a plate which has a paper towel placed on it. This will drain the extra oil. Season the fish with salt and pepper once it is on the paper towel. The fish is done!
Take a heavy bottomed pot and heat some peanut oil in it. The temperature should be 360 degrees F. Fry the potato slices in hot oil. Fry it till it becomes crispy. It should take about 5 minutes. Once it is done, drain the potato chips on a paper towel and season them with salt.
Assemble the fried fish and the potato chips on a plate. Serve with ready-made tartar dip and lemon wedges. Your fish and chips are ready to serve!
