1. Cinnamon Buns:

Preparation Time: 2 Hours 30 Minutes
Cooking Time: 30 Minutes
Serves: 15

Ingredients:

White sugar – 1 tsp
Dry yeast – 1 package
Warm water – 1/2 cup
Milk – 1/2 cup
White sugar – 1/4 cup
Butter – 1/4 cup
Salt – 1 tsp
Eggs – 2 (beaten)
All purpose flour – 4 cups
Butter – 3/4 cup
Brown sugar – 3/4 cup
Pecan – 1 cup chopped and divided
Brown sugar – 3/4 cup
Ground Cinnamon – 1 tbsp
Butter – 1/4 cup melted

Method Of Preparation:

Step 1

Take a bowl and dissolve 1 tsp yeast and sugar in warm water. Let it stand till it gets creamy. This should take 10 minutes. Now warm the milk in a saucepan till it bubbles then remove it from heat. Mix the 1/4 cup butter, 1/4 cup sugar and salt. Stir till it melts. Let it cool down till it is lukewarm.

Step 2

Now take another bowl and combine the milk, yeast, flour and eggs. Stir to combine. Stir the remaining flour, make sure you put 1/2 cup at a time. Beat it properly. When the dough is ready, turn it to a floured surface and start kneading till it gets smooth for 8 minutes.

Step 3

Now take another bowl and lightly oil it. Place the dough in the oiled bowl and turn it around to coat. Cover the bowl with a damp cloth. You need to let it rest for an hour till it doubles in volume.

Step 4

While the dough is rising, take a saucepan and keep it on medium heat. Melt 3/4 cup of butter in it. Do not use all the butter. Stir the brown sugar in and whisk till the mix gets smooth. Pour it into a baking pan. Make sure the baking pan is greased. Sprinkle the bottom of pan with pecans. Leave 1/2 cup of pecans. Set it aside. Now melt the remaining butter and set it aside. Combine the remaining brown sugar, pecans and the cinnamon. Now set it aside.

Step 5

Now the turn risen dough to a floured surface and roll it into a rectangle. Brush the rectangle dough with some melted butter. You do not need to brush the borders. Sprinkle brown sugar mixture. Start from the long side and roll up. Pinch the seam to seal. Brush some butter. Take a knife and cut the prepared dough into 15 pieces. Place the cut side downwards in a prepared pan. Cover it and let it rise for an hour till it gets doubled in volume.

Step 6

While this is rising, preheat your oven to 190 degrees C.

Step 7

Let it bake in the oven for 30 minutes till it turns golden bow. Let it cool in the pan for 2 minutes and then invert in onto a serving plate. Your cinnamon bun is ready to serve!

2. Peppermint Meringues:

Cooking Time: 1 Hour 30 Minutes
Serves: 45

Ingredients:

Egg whites – 2
White sugar – 1/2 cup
Salt – 1/8 tsp
Peppermint candy canes – 2 (crushed)
Cream of tartar – 1/8 tsp

Method Of Preparation:

Step 1

Preheat the oven to 110 degrees C. Use foil to line the two cookie sheets.

Step 2

Now take a mixing bowl and beat the egg whites, cream of tartar and salt. Make sure you use a metal mixing bowl. Beat till it forms soft peaks. Now start adding sugar and now beat till there are stiff peaks.

Step 3

Drop a spoonful on the cookie sheet keeping 1 inch distance between each cookie. Sprinkle the crushed peppermint candy on the cookies. Now it is baking time!

Step 4

Bake the cookies for 1 1/2 hours in the oven which is preheated. The meringue should be dry inside so keep a check. Make sure they do not get brown. Turn off the oven and keep the door open. Now let the meringues sit inside the oven till it cools down. Loosen the cookies with a metal spatula.

Step 5

Serve the cookies. You can store these cookies in a dry place for 2 months.

3. Chocolate Rum Ball:

Ingredients:

3 1/4 cup vanilla wafers (crushed)
Confectioners sugar – 3/4 cup
Cocoa powder – 1/4 cup (unsweetened)
Chopped walnuts – 1 1/2 cup
Corn syrup – 3 tbsp
Rum – 1/2 cup

Method Of Preparation:

Step 1

Take a large bowl and stir the crushed wafers, confectioners sugar, nuts and the cocoa. Blend the rum and corn syrup.

Step 2

Now shape this mixture into 1 inch chocolate rum balls. Roll the balls on the confectioners sugar to coat.

Step 3

Now store it in a container so that the flavor gets developed. Before you serve it, roll it on the confectioners sugar again. Your Chocolate Rum Balls are ready to serve!
