4 Yummylicious Pudding Recipes

We all like to gorge into some delicious desserts everyday after meal. At times, I think, it is better to treat ourselves to our souls’ contentment by completely forgetting about the extra calories we are taking in with that particular food. Ice cream surely is everybody’s favorite but what if we return home to find out that a delicious pudding is awaiting to be gulped down to give us an eternal pleasure to the stomach and taste buds. Some of you must be thinking that it is really tough to make pudding. But trust me- its no big deal. So here I shall give you some simple recipes for making pudding

Mango Biscuit Pudding:

Mango Biscuit Pudding

Preparation Time: 10 Minutes
Cooking Time: 4 Hours
Serves: 6

Ingredients:

Graham crackers: 200 gms
Fresh cream: 150 ml
Condensed milk: 200 gms
Ripe mangoes: 3 cups (finely chopped)

Method:

Step 1:

Take a bowl and mix the cream and condensed milk together to get an appropriate level of sweetness of this mixture. Take a rectangular container for layering the biscuits side by side. See that the biscuits do not stick or is on top of the each other. Now, pour about 1/3 mixture of the condensed milk and cream on the biscuits.

Step 2:

Settle the pieces of mangoes on this layer and then arrange a line of biscuits again on the layer of mangoes. Keep doing this entire process until all the biscuits, mangoes and the mixture of condensed milk and cream gets over. Close the container and refrigerate the pudding for 4 hours. Slice the pudding equally and then serve.

Chocolate Biscuit Pudding:

Chocolate Biscuit Pudding

Preparation Time: 20 Minutes
Cooking Time: 4 ½ Hours
Serves: 4

Ingredients:

Marie biscuits: 40 pieces (crushed)
Salted butter: ½ cup
Milk: 1 ½ cups
Sugar: 1 cup
Cocoa powder: 3 tbsp
Corn flour: 2 tbsp
Vanilla extract: 1 tsp
Whipped cream: as much as needed
Dark chocolate: for garnishing

Method:

Step 1:

Crush the biscuit completely into a dust form and then mix butter in it. Fill the dessert glasses with half of this mixture and level it with a spoon. Keep aside the remaining biscuit mix for later use. Now, mix milk, sugar, cocoa powder and corn flour in a sauce pan and heat it to make it thick. Stir continuously. After it reaches the desired level of thickness, switch off the flame and let this mixture cool to add the vanilla extract.

Step 2:

Add this chocolate pudding to the dessert glasses on top of the crushed biscuit mixture and then again settle another layer of the crushed biscuit on this. On the top add the whipped cream and refrigerate this for 3 to 4 hours. Serve cold with dark chocolate pieces on the pudding.

Mexican Flan:

Mexican Flan

Preparation Time: 10 Minutes
Cooking Time: 5 Hrs
Serves: 4

Ingredients:

White sugar: 1 cup
Whole milk: 1 cup
Condensed milk: 1 can
Eggs: 3
Egg yolks: 3
Squeezed orange juice: ¼ cup
Grated orange peel: 1 tbsp
Vanilla extract: 1tbsp
Corn starch: 1 tbsp
Heavy cream: 1 cup

Method:

Step 1:

Heat sugar in a heavy bottom sauce pan and stir continuously till it turns golden. See that it does not get burnt. After the desired color of the sugar, pour the syrup into a flat vessel to let it cool. Pre heat the oven to 350 degrees F. Now, take the whole milk, sweetened condensed milk, egg, egg yolks, orange juice, orange peel, vanilla extract and corn starch and blend until smooth. Pour the cream too and then pour the entire mixture in the cooled sugar syrup prepared earlier.

Step 2:

Place a damp kitchen towel in a roasting pan. Place the container of the above mixture inside the roasting pan. Fill the roasting pan with boiling water half of the level of the baking dish and place it in the oven. Bake this in the oven until the centre of the pudding jiggles when moved but is all set. Let this cool and then refrigerate for 4 hours. Serve cold.

Margarine Flan:

Mexican Flan

Preparation Time: 10 Minutes
Cooking Time: 1 Hour 20 Minutes
Serves: 4

Ingredients:

Egg yolks: 10
Sweetened condensed milk: 1can
Evaporated milk: 1 can
Margarine: 3 tbsp
Brown sugar: 3tbsp

Method:

Step 1:

Whisk the egg yolks, condensed milk and evaporated milk together until smooth and keep aside. Melt the margarine in a saucepan on medium heat and slowly add the brown sugar to it. Keep stirring to make this mixture smooth.

Step 2:

Now, spread the sugar on the bottom of a pie plate and then pour the custard. Cover this with a foil. Simmer a pot of ¾ water and place the pie plate on this. Cook for 70 to 75 minutes to set the flan. Remove when the flan has set, cool it and then refrigerate it until cold. Invert the flan on a serving plate and serve cold.
