Preparation Time: 5 minutes
Freezing Time: 4-5 hours

Almond milk – 1 cup
Frozen banana, chopped – 1
Peach, diced – 2
Agave – 1 tablespoon
Vanilla – ½ teaspoon
Cinnamon – a pinch


Step 1

Blend all the ingredients together till you get a smooth consistency. Pour the mixture into popsicle molds and freeze for 4-5 hours. Enjoy whenever you get the craving for a sweet treat.

2. Strawberry Balsamic Panna Cotta:

For Panna Cotta:

Powdered Gelatin – 1¼ teaspoons
Vanilla Almond Milk – 2 cups
Maple Syrup – tablespoons
Ground nutmeg – ¼ teaspoon
Sea salt – ¼ teaspoon

For Strawberry Balsamic Sauce:

Balsamic vinegar – ¼ cup
Strawberries, sliced thinly – 2 cups
Honey – 2 tablespoons
Lemon juice – 1 tablespoon
Vanilla extract – 1 teaspoon
Salt – ¼ teaspoon


Step 1

Dissolve gelatin in two tablespoons of warm water and wait for 10 minutes. Mix the rest of the ingredients for the panna cotta together and whisk well. Heat up the mixture and when it gets steaming hot, add a couple of spoonfuls to the gelatin and whisk well. Pour this mixture into the rest of the milk and mix well. Place 4 ramekins in a baking tray and spoon-in the mixture. Cover with plastic wrap and allow the mixture to cool down then chill in the refrigerator for at least 4 hours.

Step 2

To prepare the fruit sauce, heat the balsamic vinegar and once it starts bubbling, simmer till it reduces to half its quantity. Once it thickens up, add sliced strawberries along with lemon juice, honey, salt and vanilla. Simmer for another 10 minutes and then blitz in the blender few times to get a chunky sauce. Top the pannacotta with a couple of spoonfuls of the sauce before serving.

3. Raw Cacao Truffles:

Raw cocoa powder – ¾ cup
Raw almonds, ground – 1 cup

Strawberries, sliced – 2 cups

Step 1

Place honey and chopped rhubarb is a saucepan and simmer on medium heat for 10 minutes to get a jam-like consistency. Refrigerate the mixture overnight in an air-right container. To prepare the ice cream, add frozen strawberries and bananas in a blender and pulse till the fruits turn into crumb like mixture.

Step 2

Add coconut milk and blend again till you get a smooth mixture. Scoop the prepared ice cream into a large bowl and stir in the prepared rhubarb mixture, swirling it through the ice cream. Serve immediately.

5. Strawberry Lime Granita:
