Ingredients:

Tomatoes – 4
Red onion – 1
Garlic cloves – 3 (minced)
Tomato juice – 3 cups
Red bell pepper – 2
Cucumber – 1
White wine vinegar – ¼ cup
Olive oil – ¼ cup
Kosher salt – ½ tablespoon
Ground black pepper – 1 teaspoon
Dried Basil – 1 teaspoon

Method Of Preparation:

Step 1

Chop the bell pepper, cucumber, red onions and tomatoes into small pieces and wash them. Put all these veggies into a blender and crush them to make a coarse mixture.

Step 2

In a large-sized bowl, mix garlic, basil, vinegar, olive oil and tomato juice. Pour the veggie mixture into the bowl and add salt and pepper. Mix the ingredients thoroughly and let it chill for at least 2 hours. The more the soup is allowed to chill, the more flavors it will develop.

Ingredients:

Eggs – 4
Potatoes – 4 (peeled and sliced)
White onion – 1 (chopped)
Olive oil – ½ cup
Slat – ½ teaspoon
Ground pepper – ½ teaspoon

Method Of Preparation:

Step 1

Add olive oil to the medium sized skillet. Add potato and onion when the oil is heated. Cook until the potatoes become soft.

Step 2

Beat the eggs in a bowl and add potato mixture to the eggs. Add salt and pepper and blend well.

Step 3

Take a 10 inch nonstick skillet. Add a little olive oil and heat it. Empty the egg-potato mixture into the skillet and cook on low heat for 5 minutes. Flip the omelet and cook the other side too. Once it turns light brown, cut off heat and transfer to the serving plate.

3. Spanish Lemon Cream:

Ingredients:

Sweetened Condensed Milk – 6 oz
Fresh Lemon Juice – 6 oz
Plain Yogurt – 340 to 510 ml

Method Of Preparation:

Step 1

Bring the yogurt to room temperature. Add evaporated milk to a blender or a large bowl. Add lemon juice to this mixture and blend thoroughly.

Step 2

Add yogurt to the lemon juice-milk mixture and blend well until it becomes creamy and thick.

Chill the lemon cream for about an hour before serving.

4. Seafood Paella:

With tasty shellfish and crustaceans, this dramatic seafood dish looks stunning. You can also add lobster, crayfish or crab to this dish. In some regions seasonal vegetables like artichokes, peas, peppers or green beans also go into the dish, which is known as paella mixta.

Ingredients:

Finely chopped one large Onion
Olive oil – 5 Tbsp
Crushed or finely chopped Garlic – 2 Cloves
Chopped Tomatoes – 2
Sugar – ½ tsp
Salt
Sweet Paprika or Pimenton dulce – 1 Tsp
Saffron Threads – a Good Pinch
Small Squids – 4 (sliced into rings of ¼ inch wide)
Risotto Rice or Spanish Paella rice – 2 Cups
Chicken or Fish Stock – 3 cup
Dry White Wine – 1 Cup
Jumbo Shrimp – 12
Scrubbed and Debearded – 16 mussels

Method Of Preparation:

Step 1

Heat Oil in a paella pan and add onions. Fry them until soft. Stir in garlic and then tomatoes. Add salt, sugar, saffron, and pimento. Cook until tomatoes turn into a jammy sauce. Now add squid and stir for a minute. Add rice and stir until the grains are coated well.

Step 2

Take a saucepan and add wine and stock. Bring it to a boil. Pour this liquid on the rice along with salt. Cook the rice for about 18-20 minutes. Place the shrimps on top of the rice and cook further for 10 minutes until they turn pink. When the rice is cooked completely remove from heat.

Step 3

Steam the mussels and arrange them on paella.

5. Ensaladilla Rusa:

This traditional dish is popular in every province of Spain. The dish is a perfect balance of hard-cooked eggs, vegetables and potatoes in a creamy mayonnaise. Although it can be served chilled, the salad tastes best at room temperature.

Ingredients:

Potatoes – 3 medium
Diced Carrot – 1 large
Shelled Green Peas – 5 Tbsp
Green beans – 2/3 cup
Chopped Onion – 1/2
Chopped Red Bell Pepper – 1 Small
Sliced Cocktail Gherkins – 4
Baby Capers – 2 Tbsp
Anchovy-stuffed Olives – 12
Hard-cooked Egg – 1 (Thinly Sliced)
Mayonnaise – 2/3 Cup
Lemon Juice – 1 Tbsp
Dijon Mustard – 1 Tsp
Ground Black Pepper – To Taste
Chopped Parsley – Garnish

Method Of Preparation:

Step 1

Cook carrots and potatoes, beans and peas in salted water. Cook until the veggies are tender. Drain them and place them on a serving platter. Mix pepper, onion, anchovy-stuffed olives, gherkins and egg slices.

Step 2

In another bowl combine together lemon juice, mustard and mayonnaise. Add this to the veggies and mix well until the vegetables are well-coated, season with pepper and garnish with parsley.

6. Patatas Bravas:

‘Patatas bravas’ is a nationwide favorite. The humble spuds (cubed and fried) are accompanied by a fiery sauce.

Serves – 2

Ingredients:

Peeled and cubed Potatoes – 2
Olive Oil – 2 cups
Salt – 1 tbsp
Finely chopped Garlic – 1 Clove
Minced Red Chilly – 1
Olive Oil – 3 Tbsp
Smoked Paprika – ½ Tsp
Peeled Tomatoes – 14 ounce
Onion – 1
Mayonnaise – ¼ cup
Salt – 1 Tsp

Method Of Preparation:

Step 1

Mix together olive oil, salt and potatoes in a large skillet. Cook the potatoes on low heat until they are soft. Increase heat and fry further until they are golden brown (5 -6 minutes). Remove them on paper towels.

Step 2

Heat Olive oil (3 tbsp) in a pan on medium heat. Add in onion and fry until they are soft. Add chilly, garlic and smoked paprika. Fry for another 1 – 2 minutes. Add tomatoes and simmer for few more minutes. Blend this mixture to a smooth puree.

Step 3

Serve mayonnaise and tomato puree with patatas bravas.
