Servings: 4

Ingredients

Lamb Shanks: 4 pieces (350 grams each approximately)
Groundnut oil: 2 tablespoon
Red chilli: 2 pieces
Ginger: 2 tablespoon
Garlic: 3 cloves
Onion: 2 pieces
Brown sugar: 1 tablespoon
Tomato puree: 1 and ½ tablespoon
Star anise: 3 pieces
Lamb stock: 1.2 liter
Lemongrass stalks: 2 pieces
Sweet potato: 4 pieces
Fish sauce: 2 tablespoon
Lime juice: from 2 limes
Basil leaves: a handful
Mint leaves: a handful
Salt: to taste
Black Pepper: 1 teaspoon

Method Of Preparation:

Step 1

Season the lamb shanks with some salt and black pepper. Heat groundnut oil in a pan. Add the lamb shanks to the pan and frying it on both sides, until it is light golden in colour. However, make sure that you do not add all the lamb shanks at the same time. Add 2 lamb shanks at a time for frying.

Step 2

Cut the onions into halves. Add it to the hot oil after removing the lamb shanks. Let it fry for 30 to 40 seconds until it becomes soft and transparent. At this point, add finely chopped ginger and 3 cloves of sliced garlic. Fry well until it gives away a sweet aroma. Add the chopped chillis, lower the flame and cook on low heat for a minute or two. Stir in fried lamb pieces now.

Step 3

Mix in a tablespoon of soft brown sugar. As the sugar melts, stir in star anise and lemongrass. Toss it around and pour the lamb stock along with tomato puree. Season the mixture with salt and black pepper according to taste. Let it come to a boil. Cover and cook it over a medium flame for an hour to an hour and half.

Step 4

Peel the sweet potatoes and cut them into big chunks. Add this to the gravy and cover the pan. Allow it to cook for another hour. By this time, the lamb shanks should be absolutely tender and the meat must be falling off the bones. The texture of the lamb is very important for this dish and therefore, make sure that it is absolutely soft.

Step 5

To make it even more delicious, add the fish sauce along with a teaspoon of sugar. Mix in lemon juice to enhance its flavors further. Sprinkle some hand torn basil and mint leaves on top and the amazing Vietnamese Lamb Shanks with sweet potatoes are ready to be served with hot rice. You can also add another sliced chilli on top as a garnish.
