Oranges: 2 pieces
Egg: 1 piece
Ricotta cheese: 220 grams
Plain flour: 200 grams
Baking powder: 1 teaspoon
Sunflower or vegetable oil: 1 tablespoon
Semi-skimmed milk: 200ml
Nuts: a handful
Whipped cream: ½ cup (optional)

Method Of Preparation:

Step 1

Peel the oranges and cut it into thin round slices. Take a large mixing bowl. Tip in the flour along with baking powder and a pinch of salt. In the center, make a small well. Add a little bit of milk in the well and pour the egg.

Step 2

Take a whisk and slowly mix the flour with the egg and milk to form a lump free batter. Slowly, pour the rest of the milk as you continue to mix it. Keep whisking to form a smooth and lump free pancake batter. Stir in the ricotta cheese and mix until it combines with the prepared dough.

Step 3

Take a large non-stick pan and heat some olive oil. With the help of a round spoon tip in small quantities of the batter on the pan. If it is a large pan, you can make 3 to 4 pancakes at the same time. Space out the pancakes, depending on the size of your pan and let them cook on one side. When bubbles appear on the top, it is time to flip over. Cook until it is golden brown in color on both sides. Remove it in a platter when it is cooked on both sides. Press the pancakes lightly after flipping over. This will help to cook any raw batter at the center. Pancakes are generally heavy at the middle and must be cooked properly. Prepare some more pancakes with the remaining batter and keep it ready.

Step 4

In the meanwhile, stack the prepared pancakes one over the other. Drizzle some honey or maple syrup between the layers. If you are not calorie conscious or you are making it for the kids, layer the pancakes with whipped cream and scatter a few chocolate chips or nuts. Keep the orange roundels on top of the stack.
