Baked Thai Chicken Rice Recipe

Baked Thai Chicken Rice

Preparation Time: 5 Minutes
Cooking Time: 30 Minutes
Servings: 4

Ingredients:

Chicken fillet: 400 grams
Basmati rice: 250 grams
Thai green curry paste: 4 tablespoon
Onion: 1 medium size
Vegetable oil: 1 tablespoon
Coconut milk: 400 grams
Red peppers: 2 pieces
Lime zest: ½ teaspoon
Lime juice: 2 tablespoon
Coriander leaves: a handful

Method Of Preparation:

Step 1

Pre-heat the oven to 200 degree Celsius and keep it ready. Take a pan and heat some vegetable oil. Saute the onions until they turn translucent and pinkish in colour. Let the onions soften. This will take about 5 minutes on slow flame.

Step 2

Add the chicken fillets to the cooked onion. Stir very well until they change colour. As the fillets take on slight tinges of brown, add the Thai green curry paste. Although, you can use a readymade paste, homemade curry pastes are best for authentic taste and flavor. Cook for 3 to 4 minutes and coat all the chicken pieces with the curry paste.

Step 3

Add the soaked rice. Stir in deseeded red peppers, lime juice and lime zest. Mix well and add the coconut milk. As the gravy starts simmering pour 250ml of boiling water. This well help the rice to cook faster. Bring to a boil and transfer it to an oven proof casserole. Cover the lid and bake for about 20 minutes. Check whether the rice is fluffy or not. Use a fork to fluff up the rice. Sprinkle a handful of chopped coriander and baked Thai Chicken Rice is now ready to be served.
