Tortillas in a layman’s language, are slightly thick pancakes made from cornmeal, plain flour. The origin of tortilla dates back to 1500s in Spain. Today, tortillas are considered to be an important part in South American countries’ diet. Most of the times, tortilla is used as a bread (stuffed and filled). Some of the prominent dishes of tortilla include Tacos, Chilaquiles, Quesadillas and Enchiladas. To make tortillas all the more healthy and tasty.
Here Is A Recipe Of Baked Tortilla With Delicious Tomato Bean Sauce. Read On To Know More:
Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Plain Flour- 1 Tablespoon
Dried Oregano- 1/4 Teaspoon
Maize Flour- 1/8 cup
Bay Leaves- 1 piece
Finely Chopped Onion- 1/8 cup
Peppercorn- 2-3 pieces
Chopped Garlic- 1/2 Teaspoon
Tomato Puree (optional)- 1 Tablespoon
Chopped Spring Onions(optional) – 1/4 cup
Oil- 3/4 Teaspoon
Tomatoes- 2 Medium
Salt- to Taste
Sugar- 1/2 Teaspoon
For Baked Tortilla Chips
Combine all the ingredients (Plain flour, maize flour, dried oregano) in the bowl and knead into a soft dough while using warm water.
Divide the dough into 4-5 equal portions.
Roll out each portion into a thin circle of 100mm diameter.
Lightly cook the tortillas on a pan and cut each tortilla into four rectangular pieces.
Place the Tortilla pieces in a single layer on a baking tray.
Bake for 7-8 minutes at 190 degree or until the chips become light brown and crisp.
(Since the number of tortilla pieces will be more than the baking tray can accommodate in a single go, repeat the Step 5 and 6 for the rest of the batches)
For Tomato Bean Sauce
Blench the tomatoes in boiling water.
Peel and deseed the tomatoes.
Chop the peeled and deseed tomatoes and keep the tomato pulp aside.
Heat olive oil (or any other oil) in a non-stick pan. Add bay leaves, peppercorns and crushed beans and saute on a medium flame for a few seconds.
Add the chopped onions and garlic and saute on a medium flame for a few more minutes. Sprinkle salt to taste and sugar (optional)
Add the tomato pulp prepared in Step 3. You can also add tomato puree if the consistency is not thick enough.
