Taco seasoning – 1/2 tsp
Dried oregano – 1 tsp
Sour cream – 1/4 cup
Chopped green chilly – 1 can
White vinegar – 2 tbsp
Cheddar cheese – 1 cup (shredded)
Margarine – 1/4 cup
Tortillas – 6

For Guacamole:

Lime juice – 1
Avocados – 3 (peeled and mashed)
Salt to taste
Fresh cilantro – 3 tbsp
Plum tomato – 2
Minced garlic – 1 tsp
Ground cayenne pepper – 1 pinch

Method Of Preparation:

Step 1

Preheat the oven to 230 degrees C or 450 degrees F.

Step 2

Now take a large skillet and cook the beef, garlic, onion, oregano and taco seasoning together. Cook it over medium heat. The beef should start breaking into crumbles when it starts cooking. Cook for about 8-9 minutes. Drain off the excess fat. You do not want the fat of beef to overpower the dish.

Step 3

Now stir the sour cream in with vinegar and chilies. It should get mixed properly. Remove it from heat and mix the Cheddar cheese. You need the shredded Cheddar cheese for the melting cheesy flavor.

Step 4

Now take a small skillet and melt the margarine. Melt it on low heat otherwise it will get burnt. When it gets melted, dip each of the tortilla into the melted margarine. It should take 30 seconds. The tortilla should get soft. Place the soft tortilla on the baking sheet and fill it with the meat mixture. You would need 1/3 cup to fill the tortilla. Do not put too much mixture otherwise it will not fold properly and the filling will ooze out. Now fold the left and right side over the beef filling and then fold the top and bottom.

Step 5

Flip the side on the baking sheet. Tortilla seam should be downwards. Repeat the same with other tortillas. Bake it in the preheated oven till the tortilla turns crisp. It should take about 15 minutes.

Step 6

Now you need to make the guacamole. Take a medium bowl and mash the avocados, salt and lime juice. Make sure the avocados are pitted. Mix in the chopped cilantro, onion, tomato and garlic. Mix well and then add ground cayenne pepper. The cayenne pepper is option but it gives a good kick to the dish. Refrigerate it for 1 hour for a great flavor.

Step 7

Take out the prepared Beef Chimichangas and serve it hot with the refrigerated guacamole. Your dish is ready to serve! Make sure you serve it hot. Chimichangas are best served hot and crispy.

It is such an amazing dish! Also, it is not too complicated to make. You can make it easily at home without any stress. The ingredients mentioned are easily available at the store near you. You can serve it with a mayo dip or tartar dip as well. Make sure you serve some fresh veggies such as lettuce and tomato with it. It will taste yum! Happy cooking!
