Ingredients:

Flour: 2 cups and 1 tablespoon
Butter: 100 grams
Milk: ¾ cup
Caster sugar: 125 grams
Eggs: 2 pieces
Dried blueberries: ½ cup
Blueberry essence: ½ teaspoon
Baking powder: 2 teaspoon
Lemon zest: 1 teaspoon
Salt: a pinch

Ingredients For Crumble

Butter: 3 ounce
Oats: ½ cup
Caster sugar: 7 tablespoon
Flour: 4 tablespoon

Method Of Preparation:

Step 1

In a saucepan add the butter and milk. Melt the butter with the milk on a low flame and remove from the stove. Make sure that the mixture is not very hot when you are pouring it into the batter. If required, complete this step a few minutes before you start making the batter.

Step 2

In a large mixing bowl add two eggs and sugar. Add a few drops of blueberry essence and beat well with a hand mixer. When it is light and fluffy, gradually stir in the butter and milk mixture. However, do not pour it at once. Add little bit at a time and incorporate it evenly with the mixture. Avoid using hot butter as the egg may turn into scrambled eggs with the heat.

Step 3

Now add the lemon zest and fold flour into the mixture. Tip in baking powder and a pinch of salt. Fold the mixture in clockwise direction until you form an even mixture. When the flour mixes well and forms a smooth batter, fold the dried blueberries. Before adding the blueberries, roll them in dry flour and then add it to the muffin batter. Fold well. Make sure that you form a seamless batter. This will give a nice texture to the muffins. While folding, make sure that you follow one direction and do not move your spatula in different directions.
