Ricotta and spinach filled tortellini: 250 grams
Salad spinach: 100 grams
Bacon: 2 rashers
Parmesan cheese: 2 tablespoon
Ricotta cheese: 2 tablespoon
Olive oil: 1 tablespoon
Lemon juice: from 1 lemon
Lemon zest: from ½ lemon
Walnut: 25 grams
Method Of Preparation:
Take a large bowl of water. Heat it until it starts boiling. Add the tortellini pasta into the hot water and cook in accordance with instructions given on the packet. The pasta must be al dente or just done and must have a bite. Make sure that it is not very mushy or soggy. Once cooked, drain the excess water and keep it in a colander. Wash it with some cold water.
In the meanwhile, chop the walnuts and toast them on a hot grill pan. Take the bacon and grill it on the same pan until it turns golden brown in colour. Its edges must be crispy when perfectly cooked. Remove the bacon from the pan and cut it into thin strips.
