We all know that it’s important to have a healthy and power packed breakfast every morning to kick start a day. But, we generally tend to either miss it or have something that is not enough to start a day.
Today, I am sharing a couple of recipes that are filled with all the essential nutrients that are required for a breakfast. In the first recipe, we need to prepare the chicken mixture made in chilly sauce and stuff it in a double roll of eggs and rice flour. In the second recipe, we are preparing a nutty chocolate spread sandwich, grilling it and serving with creamy fresh fruit topping of apples, bananas and cranberries.
1. Chicken And Vegetables Double Roll In Green Chilly Sauce:
Preparation Time: 15 Minutes
Cooking Time: 30 Minutes
Rice flour- 2 cups
Onions- 2 (medium size)
Tomato- 1 (medium size)
Green capsicum- 1 (medium size)
Boiled corn- half a bowl
Cooked finely chopped boneless chicken – half a bowl
Green chilly, coriander, ginger, garlic paste – 2 teaspoons
Black pepper- 1 teaspoon
Salt to taste
Cooking oil- 5 to 6 teaspoons
Mustard sauce- 2 teaspoons
Method Of Preparation:
First, we need to finely chop the onions, tomatoes, capsicum. Once this is done, put a pan to heat on medium flame and add about 2 teaspoons of oil. Now, add green chilly, coriander, ginger, garlic paste and then add chopped onions, tomatoes, capsicum, corn and add salt to taste. Saute well and put the lid on and cook for about 5 minutes. Once this is done, add cooked boneless chicken and again cook for another 5 minutes with the lid on. Once this is done, remove from flame and keep it aside.
Now, beat the eggs in a bowl and add black pepper, salt to taste. Mix it well and keep it aside.
Now, we need to prepare the rice flour batter inorder to make the rolls. So, we need to add the rice flour in a bowl and add water to make a fine paste. Add salt and black pepper to taste. Once this is done, pre-heat the pan on a medium flame and add about 1 teaspoon oil in it. Now, add about 1 tablespoon of rice flour mixture on the pan and spread it evenly and put the lid on the pan. Cook it for about 2-3 minutes and remove the lid. Now, add about half tablespoon of egg mixture and cook for 2 – 3 minutes again. Once, this is done, remove the lid and add about 2 teaspoons of the chicken mixture on the half side of the roll and fold the roll.
Now, add about 1 teaspoon of oil on the other half side of the pan keeping the roll on the other half side and add the rice flour mixture so that it sticks to the roll on the other half side of the pan and gets cooked with the first half of the roll. Now, add the egg mixture cook it for about 2 – 3 minutes and again add the chicken mixture and fold it over the first folded roll. Serve it hot, topped with mustard sauce if required.
This recipe will certainly give many more nutrients compared to a plain omlet that will increase the energy level of your body to start the day.
2. Nutty Chocolate Spread Toast Sandwich With Creamy Fresh Fruit Topping:
Preparation Time: 5 Minutes
Cooking Time: 25 Minutes
Mix dry fruits- 1 Cup (cashewnuts, Almonds, Hazelnuts, Pistachios, Groundnuts, etc. as per availability)
Chocolate- 1 cup
Finely chopped medium size apple – 1
Finely chopped banana – 1
Finely chopped cranberries – half a cup
Bread slices- 4
Sugar- 3 to 4 teaspoons
Butter- 100 grams
Fresh Cream- 2 cups
Milk- half a cup
Honey- half a cup
Water- half a litre
Nutmeg powder- 1 teaspoon
Method Of Preparation:
First, we need to finely grind the dryfruits. So, mix all the available dryfruits of your choice and finely grind it. Then, we need to double boil the chocolate. Take a bowl and add the chocolate and butter in it. Pre-heat a sauce pan on a medium flame and add water in it. Once it starts boiling keep the bowl of chocolate on it. Keep stirring the chocolate mixture until it melts completely. Once the double boiling process is done remove from flame.
Now, add the dryfruit mixture in the melted chocolate. Then, finely grind the sugar and add it in the mixture. Add about half a teaspoon of nutmeg powder. Mix it well. Once it is done, remove from heat and bring it to room temperature. Then spread it on the slice of a bread of your choice and make a toast sandwich with the help of a griller. You can also prepare this spread on a large quantity and store it in the refrigerator for about 5 to 6 days.
Now, put a pan to heat on medium flame and add chopped apples, banana and cranberries in it. Add about half a teaspoon nutmeg powder for the flavouring. Mix it well and mash it slightly. Add milk and honey in it. stir it until it becomes a thick mixture and then add fresh cream. Cook for about 5 – 7 minutes and keep it aside.
Place the toast sandwich in a serving plate and top it with about 1 teaspoon of honey and the creamy fresh fruit mixture. Serve it hot.
This chocolate spread sandwich recipe is chocolaty inside and crunchy from outside which serves as a healthy snack with the creamy fresh fruit topping. It gives a different taste compared to any other sandwich prepared with all the spices.
