Cauliflower –one head cut to florets
Bacon rashers- 2 finely chopped
Butter – 50 grams
Plain flour- ¼ cup or 40 grams
Milk- 1 ½ cups or 375 ml
Dijon mustard- 2 teaspoons
Cheddar, coarsely grated- one cup or 80 grams
Breadcrumbs packaged- ½ cup or 45 grams
Olive oil- 3 tsp
Kosher salt and grounded pepper- as required to taste
Heavy cream- ¾ cup
Capers- ¼ cup in rinsed form
Place the oven rack in the middle of the oven. Preheat the oven to 350 degrees Fahrenheit. Butter an 8 by 8 inch casserole dish and keep aside.
Take a bowl and place the breadcrumbs and blend them to crumbs.
Take a non-stick skillet, add butter on it and heat it in low flame. Now, add the breadcrumbs and stir them constantly till the butter mixes with breadcrumbs and roasted in 3 minutes.
Take a medium bowl and mix the flour and cream. Now, add capers, bacon and ½ cup of gruyere .Cook with salt and pepper for taste.
Bring a medium saucepan with water and boil it on high flame. Add cauliflower and cook it for two minutes. Drain the cauliflower and blend it with the cream mixture.
Pour the cauliflower mixture into the baking dish. Now, shower the mixture with breadcrumbs and balance amount of cheese.
Spray the olive oil and cook it for 40 minutes, till the cheese melts and turns golden color.
