Cheesy Vegetable Stuffed Pork Chops With Mint Mayo Sauce Recipe

Here Is The Recipe For Cheesy Vegetable Stuffed Pork Chops With Mint Mayo Sauce:


Preparation Time: 35 Minutes
Cooking Time: 1 Hour 35 Minutes
Serves: 6


2 tbsp butter/margarine
1 celery stalk – medium (chopped)
Onion – 1 (chopped)
Carrot – 1 (shredded)
Green bell pepper – 1 (chopped)
Cheddar cheese – 1 cup shredded
Fresh thyme leaves / dried thyme leaves – 1 tsp
Salt – 1/4 tsp
Pepper – 1/4 tsp
Pork rib chops – 6 (1 1/2 Inch thickness)
Vegetable oil – 2 tbsp
Salt – 1/2 tsp
Pepper – 1/4 tsp
For Mint Mayo Sauce :
Mint leaves – 1 cup (chopped)
Green chilly – 2
Ginger – 1/2 inch
Sugar – 1/2 tsp
Fresh coriander – 1 tsp (chopped)
Eggs – 2
Olive oil – 2 tbsp
Salt – 1/2 tsp
White pepper powder – 1/2 tsp
Lemon juice – 2 tbsp

Method Of Preparation:

Step 1

Heat the oven to 350 degrees F.

Step 2

Now take a skillet and melt butter in it over medium heat. Make sure you do not burn the butter. Put the onion, celery, bell pepper and carrot in the heated butter and cook for 5 minutes. Stir occasionally till the vegetables get tender.

Step 3

Remove it from heat. Add the cheese to it and then add thyme, 1/8 tsp pepper and 1/4 tsp salt.

Step 4

Make deep cuts on the pork chop making horizontal deep pockets. Make sure you make cuts on the meaty side. Fill the pockets with the cheesy vegetable mixture. Now secure the openings using toothpicks. Make sure it is closed so that the stuffing does not drop.

Step 5

Now use the same skillet and heat some oil in it. Cook the pork chops in the hot oil for 5 minutes. Keep checking by turning it. It should be light brown in color. Sprinkle the salt and pepper. Now you need to bake this stuffed pork.

Step 6

Place the pork chop in a rectangular baking dish. It should not be greased. Cover the baking tightly and bake for 30 minutes. Uncover the stuffed pork and bake for 30 minutes more till the pork turns blush pink when you cut near the bone area where there is no stuffing.

Step 7

For preparing mint mayonnaise, you would need to beat the eggs in a bowl and then combine the green chilly, coriander, mint and ginger. Blend to make a smooth paste out of it. Add salt and sugar and blend again. Combine the eggs, lemon, pepper and oil with the mint mixture. Microwave it for 7 minutes till the mint mayo sauce boils. Cool it in an air tight container and you are done!

Step 8

Your Cheesy Vegetable Stuffed Pork Chops is ready to serve. Serve hot with the mint mayo sauce.
