Classic Vegetarian Paella Recipe

Vegetarian Paella

2 Teaspoons of Olive Oil
2 Cups of cooked rice
2 minced garlic cloves
1 cup of sliced squash, preferably yellow
1 cup of artichoke hearts, marinated
1 cup of finely sliced carrots
8 Ounces of soy sausage, preferably 1 inch pieces
1 cup of sliced baby squash
1 bunch of asparagus with trimmed ends preferably trimmed into two inch pieces
½ cup of green peas, frozen
14 ounces diced tomatoes canned
Six to eight saffron threads
One or two bay leaves
¼ cup of parsley leaves, chopped
Pepper and salt for taste
½ cup of vegetable broth, preferably reduced-sodium
Lemon juice for taste
1 teaspoon paprika

How To Prepare?

Step 1:

Take one large paella skillet or fry pan. Now, start pouring oil into the pan. Turn on the flame and continue to heat the oil on a medium heat.

Step 2:

Now, start adding garlic and sausage and allow the preparation to cook for at least two minutes. Now, continue the cooking process by adding squash, artichokes, sliced carrots, zucchini, peas, asparagus, saffron, tomatoes, bay leaves and paprika into the skillet. Allow the preparation in the pan to cook for at least 5 minutes. Now, proceed adding broth and rice and continue the cooking process for at least 5 to 7 minutes. Cook until the liquid is immersed.

Step 3:

Once the liquid is immersed, remove the heat. Take out the bay leaves from the skillet and gently put in chopped parsley leaves. Season this dish with black pepper and salt for taste. Now, start squeezing over it with a little bit of lemon juice for taste. Serve hot.
