Creamy Asiago Cheese Garlic Tortellini Recipe

Creamy Asiago Cheese Garlic Tortellini

Ingredients Required :

10 oz. of dry tortellini pasta
1 cup of vegetable or chicken broth
1 cup of grated Asiago cheese
1/2 tablespoon of salted butter
1 cup of heavy cream
1 teaspoon of olive oil
Chopped fresh parsley
5 cloves of garlic, peeled and minced
1/4th teaspoon of salt

Preparation Procedure :

Step 1

Remove the tortellini pasta from the refrigerator and let them come down to room temperature. While that happens, bring a pot of water to boil over high heat and add a pinch of salt to it once it starts boiling hard. Once ready with the water, throw the pasta into the hot water and cook them according to package instructions or until they are cooked al dente. Once ready, strain the pasta and transfer the pot of pasta to your sink below cold running water to prevent it from getting overcooked.

Step 2

Next, take a large skillet and grease it with the olive oil. To that, add the knob of butter and met it completely. Throw the minced garlic into the skillet and cook it for a few minutes, until it turns golden brown in color and gives out a sweet fragrance.

Step 3

Follow that by adding the chicken broth and the heavy cream. Stir and cook the sauce for 1 to 2 minutes over medium heat and then turn up the flame. Over medium high heat cook the sauce for 1 to 2 minutes or until it just starts boiling. Once that happens, slowly mix in the grated cheese, while stirring the sauce constantly with a wire whisk. Cook the sauce over medium heat for another 1 to 2 minutes or until the cheese melts completely and the sauce slightly thickens up. Adjust the seasoning of the sauce by adding a little salt at a time.

Step 4

Finally, slowly transfer the cooked tortellini pasta into the sauce and give the mixture a light stir, so as to coat the pasta well with the sauce. Turn down the heat to absolute low at this point and cook the pasta in the sauce for 1 minute. Finally, serve the pasta immediately with a good sprinkle of fresh chopped parsley on top.
