Apricot Walnut Cereal Bars
Preparation Time – 30 minutes
Cooking Time – 2 hours including time taken for cooling
Serves – 16 servings
Rolled oats – 3 cups
Walnuts (chopped) – ½ cup
Apricots (chopped) – 2 cups
Puffed grains (unsweetened) – 3 cups
All purpose flour – ¼ cup
Salt – ½ teaspoon
Silken tofu – 1 ¼ cup
Egg – 1
Canola oil – ½ cup
Honey – 1 cup
Vanilla extract – 1 teaspoon
Fresh lemon zest – 2 tablespoon
Method Of Preparation
Preheat the oven to 350 degrees and apply cooking spray over a jelly roll pan.
Spread walnuts and oats over a baking sheet and bake until the ingredients change golden brown in color or bake it for about 10 minutes. Shift the ingredients to a bowl and add puffed grains, apricot, all purpose flour and salt to it. Mix the all these items well.
Next take pureed tofu, egg, honey, vanilla extract, oil and fresh lemon zest. Place everything in a processor and pulverize it to form a smooth paste. Make a groove in the centre of the oats mixture in the bowl and add the tofu paste to it. Mix the ingredients by folding method and spread the mixture evenly on the jelly roll pan.
Bake it for about 40 minutes. The bar will turn golden brown and will become firm in the middle. Allow it to cool completely on a rack and cut into small bars using a knife. You can also add chocolate chips (1/4 cup) to the mixture before baking.
