Delectable Passion-Fruit Semifreddo Recipe

Passion-fruit Semifreddo Recipe


Preparation Time : 20 Minutes
Cooking Time : 15 Minutes
Serves : 5

Ingredients :

Egg yolks – 8
Caster sugar – 250 grams
Passion-fruit juice – 1 cup
Scraped seeds of vanilla bean – 1
Juice – 1 lime
Double cream – 300 grams
Pouring cream (whipped) – 150 ml
Passion-fruit pulp – 2
Passion fruit – 1 (for garnishing)

Method :

Step 1

Take an electric mixer and whisk the egg yolks in it. Whisk till it gets fluffy and pale. This should take about 6 minutes.

Step 2

Now take a small saucepan and put vanilla seeds, passion fruit juice and sugar in it. Heat it over medium heat till the sugar dissolves. The mixture should get syrupy. This will take five minutes.

Step 3

Add this syrup mixture to the egg yolks along with the lime juice. Now whisk it properly till the mixture gets cold. This will take six minutes.

Step 4

Combine the cream in a large bowl. Whisk it till it forms soft peaks. Fold this into the passion fruit mixture. Fold in the pulk and spoon this mixture into a rectangle cake tin. The cake tin should be plastic lined.

Step 5

Once you pour the mixture, smooth the top with the spoon. Keep this tin in the freezer till it gets firm.

Step 6

Next day, take out the tin and slice the semifreddo into thick pieces. Serve with the passion fruit pulp on this side. You can actually pour some chocolate sauce over it! Your dessert is ready to serve and eat.
