1 lbs. of cooked prawns (with the shells)
1 large loaf of Italian or French bread (pieces of 1 ½ inch cubes)
1 yellow onion (medium, diced and divided)
6 garlic cloves (peeled)
1 full bunch of parsley (divided)
1 /4 cup of white wine
½ teaspoon of coriander spice
A small pinch of paprika
Salt and pepper (fresh and ground)
8 teaspoon of olive oil (divided)
3 big eggs
Direction To Prepare Acorda Da Gambas:
Take a large pot and put 2 teaspoon of olive oil. Put the flame on medium heat. Now add prawn shell (separated from shrimp) and half onion, ½ parsley seeds (with stems), and garlic cloves. Sauté the mixture for the next 2-3 minutes and then add cups of water to mix well. Heat the mixture until it starts boiling and then sprinkle some salt and pepper. Once boiled, let it simmer for 15 minutes and then put off the flame.
Take a medium saucepan and add 2 teaspoon of olive oil to it. Heat over medium flame. Cut every individual prawn into chunks of 3. Now add, remaining onion, coriander, parsley and chopped prawns to the saucepan. Sauté for the next 8 minutes. Keep on stirring until the onion become translucent. Once done, set aside the shrimp mixture.
It is time when your fish stock would be cooked properly and be emitting a wonderful sweet-scented broth smell. Now, take a colander and drain the broth (prepared in step 1) into a bowl. Make sure that you save the garlic cloves. Mash the cloves and add to the shrimp mixture. Set the broth bowl aside.
Take a large pot and heat 2 teaspoon of olive oil on medium-low flame. Add the bread pieces (cube shape) and stir. Once the olive oil is well absorbed by the bread, add 2 more teaspoon of oil. Once the bread become crispy, add wine and then the stock. Mash the mixture as you proceed. At first, it will have stuffing consistency and then will appear like a thick risotto as you keep on adding liquid. While mashing, turn the heat to low. Once it acquires thick consistency, gently put in the shrimp mixture and then some salt and pepper. This prepares your cooking part of Acorda Da Gambas
