Delicious Asparagus Chicken Roll Ups Recipe

Here Is The Recipe For Asparagus Chicken Roll Ups:

Preparation Time: 25 Minutes
Cooking Time: 40 Minutes
Serves: 4


Mayonnaise – 1/2 cup
Dijon mustard – 3 tbsp
Lemon zest
Lemon juice
Dried tarragon – 2 tsp
Black pepper (ground) – 1 tsp
Salt – 1/2 tsp
Trimmed asparagus – 16 spears
Halves of Boneless chicken breast – 4 (skinless)
Provolone cheese – 4 slices
Panko bread crumb – 1 cup

Method Of Preparation:

Step 1

Firstly you need to preheat your oven to 245 degrees C or 475 degrees F. Grease the baking dish. Grease it well. Now take a bowl and mix the Dijon mustard, mayonnaise, lemon zest, lemon juice, salt, pepper and tarragon. The mixture should be well combined. Use a spoon to mix it well in the bowl. Set it aside.

Step 2

Now cook the fresh asparagus. You need to cook it in the microwave oven. Cook it on high till it turns bright green. It should get tender. This should take about less than 2 minutes. Now set these asparagus aside. Place the chicken breast between the two sheets of resealable freezer bag on a surface. Make sure it is a solid surface. Pound the chicken with a mallet. Pound till it turns into thickness of 1/4 inch. Repeat the same steps with other chicken breast halves.

Step 3

Now place a slice of the provolone cheese on each of the pounded chicken breast. Now top it up with the cooked asparagus. You need to use 4 spears for one chicken breast. Now roll the prepared chicken breast around the provolone cheese and asparagus. Make sure you do a tidy job when rolling. The seam side should be down in the baking dish. The baking dish you are using for this is the greased baking dish that you prepared.

Step 4

Now use a pastry brush to apply the coat of the mayo mix to each of the rolled up chicken breast. Now sprinkle the panko crumbs on the chicken once it is set to bake. The panko crumbs should coat the chicken well. Panko crumbs are Japanese bread crumbs which are very easy to find in stores.

Step 5

Now comes the good part of baking the rolled up chicken. Cook for about 25-30 minutes. The panko crumbs on the outside should get brown and the juices inside the chicken should run clear. Check after 25 minutes if it is cooked well or not. Your dish is ready to serve and enjoy!
