Potatoes are one of the most widely grown and consumed crop all over the world. Historically, Americans ate the potatoes fresh. However, since the technology of freezing the vegetables improved, processed potatoes (for example, french fries) have become more popular. This has led to obesity and weight gain among children and adults. However, potatoes when prepared and eaten in the right way are nutritious and healthy and baking is one of those ways.
Here Is A Recipe Of Baked Stuff Potato Skin Which Is Mouth-Watering And Healthy:
Preparation Time: 20 Minutes
Cooking Time: 30 Minutes
Chopped onion- 1 Medium
Grilled Cottage Cheese- 50 grams
Finely chopped Mushroom- 2 Tablespoon
Potatoes- 2 Medium
Green Chili, chopped- 1 Medium
Cornflour- 1 Teaspoon
Plain Flour- 1/2 Teaspoon
Salt and Pepper- To taste
Dried Oregano- 1/8 Teaspoon
White Sauce- 1/3 Cup
Butter- 20 grams
Cooked Corn- 3/4 Cup
Fresh Cream- 1/2 Tablespoon
Tabasco or Capsico Sauce (Optional)- 1/4 Teaspoon
Milk- 1/2 Tablespoon
Boil the potatoes. Cut them lengthwise and scoop out leaving thick walls.
Bake the potatoes in hot oven until crisp or light pink in color.
Sprinkle some salt and pepper over the potatoes.
For The Mushroom Filling:
Heat the butter and fry onions in it for 1/2 minute.
Add the flour and green chili and fry for a few seconds.
Add the mushrooms and oregano to it. Cook for 2 to 3 minutes or until soft. Add salt to taste.
Add the white sauce and mix well.
For The Corn Filling:
Heat the butter and fry the onions in it for 1/2 minute.
Add the green chili and fry again for a few seconds.
Add the corn to it. Cook again for a few minutes.
Mix the milk, fresh cream and cornflour and add to the corn. Cook again for a few minutes. Add salt to taste.
Take off from fire, add the cheese and a few drops of Tabasco Sauce or Capsico Sauce.
Put either the mushrooms or corn filling inside the baked potato skins. Sprinkle the cheese on top and bake in a hot oven at 200 degrees C (400 degree F) for 5 minutes.
Serve hot with tomato sauce as a snack or a starter.
