Preparation Time: 10 Minutes
Cooking Time: 20 Minutes
Cauliflower: 1 small
Eggs: 2 pieces
Vegetable oil: 2 tablespoon
Plain flour: 100 grams
Oil: for deep frying
Mayonnaise: for serving
Tomato ketchup: for serving
Method Of Preparation:
Cut the cauliflower florets into medium size. Blanch them in boiling water for 2 to 3 minutes. Drain the excess water in a colander and wash in cold water. Let it cool down.
Break the eggs and separate the yolk and egg white. In a large bowl tip in the flour along with a little bit of salt. Mix with a whisk. In another bowl take the egg yolks and whisk it with 175ml of ice water. Add this to the flour mix and whisk well. Stir in 2 tablespoon vegetable oil and combine well. Make sure that the mixture is lump free. Take another bowl and beat the egg whites until it forms stiff white mounds. Gradually, fold this with the batter, without losing its aeration.
In a deep pan, heat adequate amount of oil for deep frying. Dip each piece of cauliflower in the batter and put it in the hot oil. Use a slotted spoon to separate each piece. Let them fry for 2 to 4 minutes in medium heat until it turns golden brown and puffy. Remove the cauliflower pieces from the hot oil and place it on an absorbent kitchen towel. Sprinkle some black salt on top and serve with a mayonnaise dip and tomato ketchup.
