Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Serves: 6

Thickened cream – 300 ml
Milk – 1 cup
Caster sugar – 1/2 cup
Vanilla bean – 1 (split, seeds scraped)
Powdered gelatine – 2 tsp
Grappa – 60 ml

For Grappa Caramel Sauce:

Caster sugar – 75g
Grappa – 2 tbsp

Method Of Preparation:

Step 1

Place the milk, sugar, cream and the vanilla pod and the seeds in a pan over medium heat. Stir to dissolve the sugar. Bring to below boiling point and remove it from heat. Let it stand for about 15 minutes so that it infuses.

Step 2

Place the cold water in the saucepan and sprinkle the gelatine powder. Now let it stand for 5 minutes. Heat it over low heat and stir for 2 minutes till it is clear. Stir this into the cream mixture that we prepared in Step 1.

Step 3

Now strain the mix into a jug and add the grappa. Pour this into jelly moulds, cover it and chill for about 4 hours till it gets set. It can take more time too. You need to check after 4 hours whether it is set or not.

Step 4

Now make the grappa caramel and for that, place the sugar and cold water in a saucepan over low heat till the sugar gets dissolved. Increase the heat to high and boil it without stirring it. It should take 3 minutes. It should turn into a rich caramel sauce. Now remove it from heat and place the base of this pan on a large bowl of water. Use ice water for this. Add the grappa and some more cold water to the caramel sauce. Put the pan on low heat again and cook. Stir it occasionally. It should take 5 minutes for the sauce to get smooth and nice. Allow it to cool and then pour it into a jug and cover it. Set it aside. You do not need to refrigerate this.

Step 5

Now for serving, dip the jelly moulds in warm water. Turn it on plates and you will get a beautiful shape of panna cotta. Drizzle some caramel sauce on top of the panna cotta. Your Grappa Panna Cotta is ready to eat!
