Grilled New Zealand Lamb Rack With Potatoes:
Preparation Time: 15 Minutes
Cooking Time: 30 Minutes
New Zealand Lamb Rack 220 gm
Small Potatoes 100 gm
Unsalted Butter 75 gm
Asparagus 80 gm
Broccoli 40 gm
Snow Peas 35 gm
Red Wine 60 ml
Sea Salt as per taste
White Pepper Powder as per taste
Olive Oil 1 table spoon
Clean the Lamb Rack properly with water. Also remove the fibrous tissues from it. Now pour it in a bowl and sprinkle some sea salt on it.
Marinate it with sea salt for at least one hour. Peel the skin of the small potatoes and clean properly with water. Now coat them with butter, salt and white pepper powder. Roast the potatoes in your oven for 15 minutes.
Now heat a pan and pour the Lamb Rack on it. Brush little olive oil on it. Grill the Lamb Rack a little. Turn it to the other side when you are grilling it to cook it from all sides. Then cook the Lamb Rack in 190 degree centigrade for 6 minutes in micro oven.
Chop the vegetables except the peas. Clean them properly with water. Steam the veggies in salted water for 7-8 minutes so that they turn completely soft. Then take a serving dish and pour the lamb rack in it.
