Italian Pasta in Creamy Pesto Sauce

Preparation Time- 15 minutes
Cooking Time- 30 minutes
Serves- 4


Pasta- 20 gms., any variety
French beans- 7-9, cut in half
Spinach leaves- 2 cups
Olive oil- 2-3 tbsp.
Zucchini- 1, chopped
Red chilly flakes- 1 tsp
Broccoli- 1/2 cup, chopped
Water- as required
Salt- to taste

For The Pesto Sauce

Pistachios- 1 cup, blanched
Garlic- 4-5 cloves
Green chilly- 1 nos.
Basil leaves- 1-2 cups
Olive oil- 2 tbsp.
Parmesan cheese- 1 cup, grated
Black pepper- to taste
Salt- to taste

Method Of Preparation:

To Prepare The Pesto Sauce

Step 1:

Mix together basil leaves, blanched pistachios, green chilly, garlic cloves, Parmesan cheese, olive oil, black pepper and salt in a blender to make a fine paste. Set aside.

To Make The Pasta

Step 2:

Boil required amount of water in a saucepan. Add pasta, French beans, spinach leaves, a little olive oil and salt into it. Keep on flame for 10 minutes. Keep one cup of this water aside and drain the rest of it.

Step 3:

Heat olive oil in a deep bottomed pan and add broccoli, zucchini, chilly flakes and salt to it. Stir fry for a few minutes. Keep the vegetables aside.

Step 4:

In the pan, pour the pasta water then add the al-dente pasta, vegetables and pesto paste to it. Cook for about five minutes while mixing all the ingredients together properly.

Step 5:

Serve hot topped with grated Parmesan cheese.

Tip: You can also use greens like cilantro, parsley, kale and arugula as a substitute of basil to make the pesto sauce.
