Courgettes: 4 pieces
Breadcrumbs: 50 grams
Sundried tomatoes in oil: 6 pieces
Olive oil: 3 teaspoon
Pine nuts: 50 grams
Garlic: 1 clove
Thyme leaf: 1 tablespoon
Spring onions: 6 pieces
Parmesan cheese: 25 grams
Salad: to serve

Method Of Preparation:

Step 1

Cut the courgettes into halves. Pre-heat the oven to 220 degree Celsius. Take a large baking tray. Arrange the courgettes on it with the cut side on top. Brush some olive oil over the courgettes and let it bake for 20 minutes.

Step 2

To prepare the stuffing for the courgettes, take a large mixing bowl and add the sundried tomatoes. Mix in crushed garlic, finely sliced and chopped spring onions, pine nuts and the thyme leaves. Drizzle olive oil and add the breadcrumbs. Grate some parmesan cheese over it and mix well. Season it with some salt and black pepper.

Step 3

Use a spoon to spread the prepared stuffing on the courgettes. Fill each courgette with the stuffing and drizzle some olive oil on top. Put them back in the oven and let it cook for another 10 to 15 minutes. By this time, the courgettes will be soft and the stuffing will form a brownish outer crust.

Step 4

Prepare an accompanying salad to serve with the Italian stuffed courgettes. Take some cherry tomatoes, iceburg lettuce and cucumber in a large bowl. Season it with salt and black pepper. Prepare a dressing with lemon juice and olive oil. Drizzle it over the salad and mix well. Serve it with hot courgettes.
