Now usually people make Kung Pao Chicken but today we are going to tell you how to make Kung Pao Calamari. Calamari is yummy seafood which is usually deep fried and eaten just like onion rings. For The Kung Pao Sauce
Plum sauce – 1 1/2 cups
Rice wine vinegar – 3 tbsp
Chili garlic sauce – 2 tbsp
Sesame oil – 2 tbsp
Black sesame seeds – a pinch
White sesame seeds – a pinch
Chopped fresh cilantro – 1/4 bunch
Corn flour – 2 pounds
Baking powder – 1 tbsp
For The Calamari
Cut into rings, cleaned Calamari – 2 1/2 pound
Hot pepper rings (sliced) – 15 ounce
Dry roast peanuts – 10 ounces
Chopped scallions – 5 ounces
Lemon wedges (garnishing)
Method Of Preparation:
Firstly, you would need to make the kung pao sauce. Take a large bowl and mix the rice wine vinegar, 1/2 cup water, plum sauce, sesame oil, chili garlic sauce and cilantro. Set it aside. This sauce is the soul of the dish. Without this sauce, you will not have the kung pao taste.
Now you need to take a bowl and combine salt, pepper, baking powder, corn flour for the flour dredge. This is for the coating the calamari rings. This is called the flour dredge which is an important step in this dish.
Now you need to prepare the deep fryer. Just heat it to 350 degrees F. Drop the calamari in the flour dredge and make sure you get an even coating. Your calamari may be wet but it is fine as long as you drenched it. Do not let the coating on the calamari get clumpy. Now drop these coated calamari into hot oil. Fry it for about 1 minute and add the pepper rings to the same oil. Let it fry for 30 seconds. Now drain the pepper and calamari on a paper towel. All the oil should get absorbed by the paper towel. This makes the dish less greasy and delicious.
Now you need to plate. For that, you need to drizzle at least 4 ounces of the homemade kung pao sauce over the hot pepper and calamari rings. Sprinkle the scallions and roasted peanuts on them and garnish it with the lemon wedges. Make sure you mix the kung pao sauce into the calamari rings and hot pepper. The sauce will get absorbed deep in your dish making it delicious and perfect. Your dish is ready to serve! Make sure you serve it hot.
