6 chicken drumsticks
6 cloves of garlic
2-3 tablespoons of corn flour
1 cup chicken stock
½ cup pure honey
1 teaspoon black pepper powder
olive oil and salt
Methods of Preparation:
Cut one lemon and squeeze out the juice. Eliminate the seeds because lemon seeds are bitter by nature and if one seed fall in the cooking by chance, it may make whole the dish bitter.
Wash chicken drumsticks and strain the water. Use a clean cloth to rub out left over water from chicken’s body. Prick drumsticks with any sharp knife or fork. Sprinkle some salt over them. Pour the lemon juice over them and mix everything with your fingers to mix everything properly. Now marinate the chicken for an hour.
Grind onion and garlic to paste.
Take 2-3 strands of lemon grass. Remove the outermost part and trim it till purple part of the lemon grass is exposed. Then cut them into small pieces. The lower part of the lemon grass are though hard, are used mainly as flavoring agent.
Mix corn flour and chicken stock in a container and keep them aside. Be sure that corn flour is mixed properly and there is no lump present in the mixture.
Heat 2 tablespoons olive oil in a pan and add spices in the oil. Keep stirring to fry the spice. Then add chicken drumsticks in the oil along with its marination. Stir them for 2-3 minutes. Add lemon grass in the preparation and cook them on a low flame for 20-25 minutes to get soft keeping the lid on. It will also help to retain the beautiful aroma of lemon grass to retain in the chicken. The water will come out of chicken if you cook them on a low flame. After that, remove the lid and check with the help of a fork whether the chicken is soft or not. If it is soft then pour the corn flour mixed chicken stock. Keep stirring. When the corn flour gets thick, pour the honey. Mix well and remove it from oven. Sprinkle some freshly ground black pepper powder over it.
Garnish the preparation with freshly chopped coriander leaves and serve it hot with steamed rice. It is a very light but tasty preparation that will be enjoyed by every member of the family irrespective of their age.
