Flavored with tex-mex style nacho ingredients and topped with lean ground turkey and low-fat cheddar cheese, these sweet little ground turkey pepper boats sure are indulging without being heavy on calorie-count.
Here Are The Delicious Low-Fat Bell Pepper Nacho Boats Recipe
Preparation Time: 10-15 minutes
Cooking Time: 20-25 minutes
• 1 lb. of lean ground turkey
• 1 cup of grated reduced-fat cheddar cheese
• 1 teaspoon of cumin
• 3 yellow or red bell peppers
• 1 teaspoon of red chili powder
• 3/4th cup of unsweetened salsa
• 1/4th teaspoon of sea salt or kosher salt
• ½ teaspoon of freshly ground black pepper
Start the preparation by taking all the bell peppers in a colander and rinsing them under cold running water. Rinse the bell peppers well and then pat them dry with the help of paper towels. Once done, place the bell peppers on your kitchen counter and with the help of a sharp knife slice them up into 6 pieces each, where the pieces resemble boats. Make sure that you get rid of all the seeds, membranes and the cores from the bell peppers. Once done, set the bell pepper slices aside.
Now take a skillet and place it over medium high heat. Grease the skillet lightly with oil and then once the oil starts developing ripples, crumble the ground turkey into the skillet. Cook the turkey while stirring and breaking it occasionally. Continue cooking the turkey for 10 to 12 minutes or until it loses pink color and the fat gets rendered. Once done, transfer the ground turkey to a heatproof bowl and discard the fat from the skillet.
After that, set a preheating temperature of375 degrees Fahrenheit on your oven to prepare it for baking the pepper boats. Fetch the bowl of cook ground turkey and mix the salsa, cumin, kosher salt, red chili powder and the ground black pepper to the turkey. Return the turkey to the skillet and cook the mixture on medium low heat for 3 to 4 minutes.
Once done, arrange the bell pepper slices in a greased baking tray and spoon out the ground turkey mixture evenly over each of the pepper boats. Top the ground turkey mixture with the grated cheddar cheese and then pop the baking tray into the oven. Bake the ground turkey pepper boats for 12 to 12 minutes or until the cheese on top starts melting and turns bubbly. Once ready, serve the hot ground turkey bell pepper boats with additional toppings like sour cream, jalapeno peppers, sliced green onions, avocado or Greek yoghurt.
