Delicious Marathon Burritos Recipe

Brown rice – 300 gram
For lime juice – 1 lemon
Chopped coriander – ½ small pack

Ingredients Needed For Black Beans

Olive oil – 1 teaspoon
Chipotle paste – 1 teaspoon
Crushed garlic clove – 2
Ground cumin – 2 teaspoon
Brown sugar – 1 teaspoon
Apple cider vinegar – 1 teaspoon
Chipped tomato – 400 gram
Drained and rinsed black beans – 2 (400 gram) cans

Ingredients Needed For Salsa And Guacamole

Chopped coriander – ½ small pack
Finely chopped red onion – 1
Chopped tomato – 2 large
Juice from – 2 lemon
Stoned and peeled avocado- 2

Ingredient Needed For Serving

Natural yoghurt
Large and whole meal tortilla wraps
Grated cheddar
Halves of lemon to squeeze over the recipe

Direction On How To Prepare The Recipe:

Step 1

Take a medium saucepan and add rice with 600 ml of cold water in it. Do add a pinch of salt as per your taste. Cook till the water starts boiling. When it does, reduce the setting and cover the saucepan with a lid. Let it simmer for about 20 minutes or until all the water from the rice has disappeared. Remove the saucepan and leave aside for at least for 10 minutes without disturbing. After 10 minutes, stir the rice and add lime juice and coriander over it.

Step 2

Now comes the part in which you have to prepare the black beans. For preparing, take a large frying pan and add some oil. Next put cumin, chipotle, garlic, vinegar and salt. Mix all these ingredients and cook for approximately 1 minute. Next add tomatoes and beans and stir for once again. Without placing the lid, cook these ingredients on low setting for approximately 20 minutes or until thickened.

Step 3

For preparing the third and the last part – Salsa and guacamole, add tomatoes, coriander, onion, lime juice and seasoning in a bowl. Shift half part of the salsa into another bowl and add avocados as well so as to form guacamole. Mix all these ingredients in whole meal tortillas sprinkled with natural yoghurt, grated cheese and lime juice. Stir all these ingredients once again and your dish is prepared. Now serve the rice with the black beans and salsa and guacamole.
