We love Mexican cuisine. There is a lot going on when you take a bite of a burrito or a taco. Speaking of burritos, today we have a recipe for you. The recipe is of Mexican Chorizo Burritos. Chorizos are easy to find in stores. It tastes yummy with a little scrambled egg inside the burrito. It is cheesy and yummy! Take a look at the recipe and start cooking. Here Is The Recipe Of Mexican Chorizo Burritos:
Preparation Time: 15 Minutes
Cooking Time: 25 Minutes
Russet potato – 1 small (cut in cubes)
Olive oil – 6 Tsp
Mexican chorizo – 1/2 pound
Flour tortillas – 2
Egg – 4
Ground black pepper
Cheddar cheese or Monterey Cheese – 1/2 cup
Chopped cilantro – 1/3 cup
Tomato salsa – 1/3 cup
Method Of Preparation:
Heat your oven to 300 degrees F. Now take a bowl which is microwave safe. Now you would need to toss the cubes potatoes, olive oil and salt together. Cover this bowl using a plastic wrap and microwave it for about 5 minutes. Stir in between. You would need to check whether the potatoes are tender or not. You can do it for 30 seconds extra to get it tender.
Now take a frying pan and put 2 tsp of olive oil in it. Make sure it is a nonstick frying pan. Heat the oil over medium heat. Add the cubed potatoes and cook till they are brown. This should take at least 5 minutes.
Now transfer these potatoes to a bowl and set it aside. Crumble the Mexican chorizo into the same frying pan and cook it. Stir it and break the meat. You want a crumbly texture but it should get into small chunks. You want it to get cooked through. It should take 5 minutes or so to cook through.
Now add these cooked chorizo and potatoes in a bowl. Cover it to keep it warm. Clean the frying pan. You can just wipe it.
Now is the time to warm the flour tortillas. Put the tortillas in the oven till they get warm. While the tortillas warm, you can cook the egg. Whisk the 2 eggs in a bowl till they break up. Season the egg with salt and pepper. Add olive oil to the same pan in which you cooked the chorizo. Make sure it is wiped out though! Heat olive oil in it and then once it is hot, pour the beaten eggs. You do not need to do anything to the eggs till the set at the edges. Now once they are set, you need to scramble them. You need scrambled eggs out of these eggs. This should be done in about 3-4 minutes.
Now divide the scrambled eggs between the tortillas. You will be making two burritos. Top it up with the chorizo, grated cheese, salsa, cilantro and potatoes. Fold the sides which are short towards inside and the bottom flaps should be up. Roll it into perfect burritos. Your dish is ready to eat!
