Delicious Mexican Eggs in Red Cheesy Salsa

Serves: 6

Ingredients:

6 eggs, 4 red tomatoes
4 Mexican chilies
1 onion
5-6 cloves of garlic
cheese
olive oil
salt
carrot
yellow and green bell pepper
black pepper
parsley and basil

Methods Of Preparation:

Step 1

Boil eggs, de-shell them and cut them horizontally in to equal pieces. Sprinkle some salt over eggs and keep them aside.

Step 2

Peel tomato and chop them.

Step 3

Peel onion and garlic and chop them finely.

Step 4

Boil whole Mexican chilies in water for 5-6 minutes.

Step 5

Grate cheese and keep 1 cup grated cheese apart.

Step 6

Chop parsley and basil and keep them separately.

Step 7

Peel and dice the carrot. Dice bell pepper too.

Step 8

First you have to make salsa. For this purpose heat 2 tablespoons olive oil on a pan. Add chopped tomato, onion, garlic and boiled Mexican chilis. Fry them lightly. Now remove them from pan and add them in a grinder and grind them to paste. You may add water to make it smoother. Again pour the paste on the pan and add chopped basil leaves in it. Cook them for 3-4 minutes. Remove them from pan. Your salsa is ready.

Step 9

Again heat a little amount of olive oil on a pan. Add eggs on that oil. While adding them on pan, keep yolk portion on the bottom side. It means yolk portion will touch the hot oil and hot bed of utensils. It helps to set eggs properly. When the yolk side is properly fried change the side and fry outer portion of eggs lightly and remove them from pan. Add carrot on the remaining oil and just sauté them.

Step 10

In a micro oven proof container add fried eggs. Pour salsa over them. Add grated cheese over them. Add chopped parsley over them. At last add diced bell pepper over them. Keep them in micro oven and cook them in 180 degree convection mode for 5-6 minutes. It will help to melt cheese. Remove them from micro oven.

Step 11

Sprinkle some black pepper powder over the preparation and garnish it with freshly chopped parsley leaves. Serve it hot with steamed rice. it is really enjoyable in cold winter.
