Delicious Mexican Pork Tamales Recipe

It is something which will make your mouth water! It is called Pork Tamales. It is a very traditional Mexican dish that uses pork and masa dough. You would need lots of corn husk for this as well. You surely need to go out and shop for the ingredients because this dish is special. How about that? You would need a steamer for this recipe which can hold lots of tamales. We are sure you will absolutely love this dish a lot. It is perfect for any occasion and since you can store them for long, you can eat it as a snack any time. Here Is The Recipe For Pork Tamales:

Preparation Time: 1 Hour
Cooking Time: 3 Hours
Serves: 7


To Prepare The Masa Dough:

Masa Flour (corn) – 6 cups
Salt – 1 tbsp
Pepper – 1 tbsp
Cumin – 2 tbsp
Garlic powder – 2 tbsp
Chili powder – 1 tbsp
Paprika – 1 tbsp
Lard – 1 pack
Baking powder – 2 tbsp
Broth – 6 cups

For The Filling:

Shoulder pork – 1.5 kgs
Salt – 1 tbsp
Pepper – 1 tbsp
Cumin – 1 tbsp
Garlic powder – 1 tbsp
Recado paste – 1 tbsp
Water – 20 cups

For The Mole :

Chipotle chillies – 10 (dried)
Onion – 3 medium
Garlic powder – 2 tbsp
Cumin – 1 tbsp
Dried oregano – 1 tbsp
Chopped tomatoes
For finishing –
Corn husk – 50 dried

Method of Preparation:

Step 1

Firstly you need to cook the pork. Remove the pork shoulder skin and chop it into big chunks. Pop the chopped pork shoulder skin into the saucepan and cover it with the 20 cups of water. Add the seasoning and bring it to a boil. Simmer it for about 2 hours. The meat should get shredded. When your pork is ready and shredded, remove it from the broth and let it cool. You do not need to discard the broth. This is for the filling of the tamales.

Step 2

Now you need to prepare the dough. It is called the masa dough. Take a mixing bowl and add 6 cups of the Masa flour, salt, cumin, garlic powder, paprika, pepper and baking powder. Add 6 cups of the broth that you did not discard in step 1. Beat it well. Dissolve lard in the microwave in a bowl. Leave it covered to cool it. Now put the husk in a bowl and cover it with hot water. It will soften the husks. This should take 30 minutes to soften.

Step 3

Now make the mole. You need to fry the onions till they get brown. Now add the tomatoes, chillis and the seasoning. Now add the remaining broth. Bring it to a bowl and turn it down to simmer. Add a cup of masa flour and stir it till the mole thickens. Leave it to cool. Your mole is done here!

Step 4

Now you need to prepare filling. Shred the prepared pork using your fingers. You can take 2 forks to shred the pork. Put it into a mixing bowl. Add the mole in till you get a moist mixture. It should not be too runny. You need a moist mixture and not something which is too runny because it will ruin the entire dish.

Step 5

Now you need to make the tamales. Take a husk and place it on a flat surface. Take a tablespoon of the masa dough and spread it on the husk. Place the filling in the center of the masa. Pick the husk up and roll the yummy masa over the filling. Roll it into a tube like shape and flip the pointed end. You need to make a packet like structure. Tie it up with butcher string. You can use a strip of the husk to tie it too. Place it in the steamer and steam it for about 90 minutes till it gets cooked.

Step 6

Once it is cooked, you can eat them up or you can also store them for later. Store them in the freezer. They stay good for several days. You can vacuum seal it. You can have these with salsa and some yum salad.
