In this delicious recipe of beef, more particularly beef shin and skirt are cooked in a one-pot dish that slowly-slowly infuse all its smoky flavoring taste and fragrance into the beef pieces. This one is an ideal dish that one aims to cook for small family dinners or as a main course in get-togethers.

Ingredients Required For Beef In Red Wine With Melting Onions Recipe:

Onions: 2 medium sized, sliced in the form of rings
Red wine: 400 ml
Butter: 25 gm
Garlic –Cloves: about 6 in number, chopped
Freshly chopped cilantro: ¼ cup, for garnishing
Plain flour; 2-3 tablespoons
Beef slices of shin or skirt: 600 gm, cut into cube sized chunks
Grounded coriander powder: ½ tablespoon
Grounded Cumin Seeds: Half tablespoon
Olive/rapeseed oil; 2-3 tablespoons
Bay Leaves: 3-4, in number
Beef Stock: 30-350 ml
Fresh Ground Black Pepper: 1 tablespoons
Fresh Tomato Pulp: 2 tablespoons
Fresh Portobello Mushrooms: 250 gm, cut into halves
Salt: as per requirement
Black pepper- Half teaspoon
Green Chillies: 2 in number, finely chopped

Method Of Preparation:

Now, let’s have a detailed overview on step-by-step procedure of how to prepare this recipe.

Step 1:

First of all preheat the microwave oven to 150⁰. Take a deep-skilled casserole dish pan having a lid. Now, put some butter into it and let it melt completely. Then put some sliced ring shaped onions into it. Fry it for a while and then put some garlic cloves into the pan. Then, cook for another 10-15 minutes until onions and garlic cloves will acquire a deep-golden color and then transfer the entire contents into a small dish.

Step 2:

Now, take a large plastic food –envelope and then put some grounded black pepper and plain flour into it. Add half of the beef shin or skirt and shake the food envelope, so that all the beef chunks gets coated with black pepper and flour coating. Ina similar manner, coat the rest of the beef chunks with the black pepper and plain flour coating.

Step 3:

Now, heat some oil in the earlier used casserole dish pan and when the oil has heated as per requirement, then add some bay leaves, followed by beef chunks. Let the beef gets fried and will acquire a golden brown color. Now, put the specified quantity of red wine on the top of the fried beef chunks and transfer the fried onions and garlic cloves on the top of it. Stir it and let it simmer on a low flame. Cover the casserole dish with a lid and put the oven in flap for about 45-60 minutes.

Step 4:

Next, add some tomato puree, cumin seeds, chilli flakes and stock to these beef chunks and let it simmer for a while. After about 1 hour, put the Portobello Mushroom slice into the mix and then again put the dish pan in the oven for about 5-10 minutes. next, check the consistency of the beef if it is cooked then remove it from microwave oven.

Step 5:

However, if the beef chunks still appears to be form, then let it cook for another 5-10 minutes on microwave high. Finally, transfer the entire contents in a serving dish and garnish it with fresh and finely chopped cilantro. You can have this amazing dish along with steamed rice or even with baked bread.
