Cheese is very popular ingredient in our cooking. Here is a yummy recipe made with cheese which is really delicious. Tomato Cheese Risotto with Roasted Chicken which is a complete dish as it contains both rice and chicken. Lots of herbs used in this recipe which makes it so special. Here the recipe is specified for 1 people. When you prepare it for more people just multiply the quantity of the ingredients with the number of persons that you are preparing for.
Tomato Cheese Risotto With Roasted Chicken:
Preparation Time: 10 Minutes
Cooking Time: 35 Minutes
Onion 1 (chopped)
Celery 1 stick (chopped)
Arborio Rice 60 gm (for 1 people)
Tomato 400 gm (remove the skin of the tomatoes)
Tomato Paste 1 tbsp
White Wine ½ cup
Olive Oil 2 tbsp
Salt and Black Pepper powder as per taste
Garlic Cloves 3 (chopped)
Basil 1 handful
Basil (for the rice) 1 handful
Butter 1 tbsp
Parmesan Cheese 2 tbsp
Chicken Drumstick 1
Butter 1 tsp (unsalted)
Chicken Stock 1 cup
Firstly marinate the chicken drumstick with salt and black pepper powder for near about 10 minutes. Then take a non stick pan. Pour little amount of butter in it and allow it to boil in low flame.
Then lightly fry the chicken in this for 10 minutes so that it turns little bit soft. Then bake this chicken drumstick until it turns golden. Keep it aside to use it in the later part of this recipe.
Then put the non stick pan again on the flame. Then pour chicken stock, thawed garlic and basil in it. Cook them for another 5 minutes. In the mean time grind the tomatoes, which you have peeled before to prepare fine paste out of that.
Again put another non stick pan on your oven. Then pour olive oil in this pan. Then pour chopped onion and chopped celery in this pan. Add salt to taste in it and fry it.
Then add white wine in it and stir it again to cook it for some time. When it gets dry pour Arborio Rice in it and also fry it well. When it turns white add chicken stock in the pan.
Allow it to boil for few minutes. When the stock dries add tomato paste in the pan. Again stir it to cook. When the whole thing get cooked turn off the flame.
Then add chopped basil leaves, salt to taste, black pepper powder, unsalted butter, Parmesan Cheese and a little olive oil in it. Close the lid of the pan and give it a standing time. Then mix well.
Now take a serving dish and pour the chicken drumstick in the center of the dish. Then pour the risotto on it after that spread chopped basil leaves on the top. Also sprinkle grated Cheese on your risotto. Here your Tomato Cheese Risotto with Roasted Chicken is now ready to serve.
