Bacon dripping – 2 tsp
All purpose flour – 3/4 cup
Salt – 1 tsp
Fresh ground black pepper – 1/4 tsp
Egg – 1 (beaten lightly)
Milk – 2 tbsp
Bread crumbs – 1 cup
Cracker crumbs (the butter ones, crushed) – 1/2 cup
Lemon juice – 2 tbsp

Method Of Preparation:

Step 1

Cut the venison tenderloin into steaks. Make sure they are 1/2 inch. Slice each of the steak into half. You want to slice them horizontally. Slice from small to large side till there is a little section left. You want the two halves to be connected. Slice the little scores which are on the outer edge from each of the steak so that you avoid the meat from curling when frying.

Step 2

Now take a heavy skillet and preheat the oil along with the bacon drippings. You need to heat on medium heat. Now take a shallow dish and combine the salt, pepper and flour. Take another bowl and beat the milk and egg together. Now take another bowl and combine the cracker crumb and bread crumbs.

Step 3

Dredge the prepared steaks in the all purpose seasoned flour. You would need a meat mallet to pound the steaks. Just pound them slightly. Now the dip the steak into egg mixture and coat each of the steak with the crumb mixture. Now transfer these coated steaks to a clean plate. When all the steaks are coated, place them gently in a layer into the preheated oil. You want the oil to be nice and hot for them to fry properly.

Step 4

Fry the venison steaks for about 3 minutes for one side. They should turn golden brown. Drain the venison on paper towels. Sprinkle some lemon juice over the steaks lightly. Your dish is ready to serve!
