Delightful Stuffed Chicken Valentino

Serves: 4

Recipe Ingredients:

Boneless, skinless chicken breasts, halved – 4
Dried Italian Seasoning – 1 teaspoon
Roasted Bell Peppers (red), drained – 1 jar (6 ounces)
Parmesan cheese, grated – 2 tablespoons
Mozzarella cheese, shredded – 4 tablespoons
Fresh chives, chopped – ¼ cup
Olive oil – 2 tablespoons
Pepper – as per taste
Salt – as per taste

Recipe Preparation:

Step 1

Start by preheating your oven to a temperature of 175 degrees Celsius or 350 degrees Fahrenheit.

Step 2

Cut your chicken lengthwise into two half slices but make sure to leave the slices attached on one of the sides. Now open up the halves and lay them flat in such a way that the chicken breasts look like a butterfly. Now place the pieces of chicken breast between two plastic wrap sheet and pound them down till they become flat. Repeat the same process with the rest of the chicken breasts as well.

Step 3

In a small bowl, mix together the chives, Italian seasoning and Parmesan cheese. Mix everything together and sprinkle on top of the prepared chicken breasts. At the end of the breast, place three strips of pepper and top with another tablespoon of shredded cheese. Now start rolling each breast beginning from the side that contains the cheese and pepper and roll up. Add in a toothpick to prevent them from unrolling.

Step 4

Place the prepared chicken rolls in a greased baking dish and season with pepper and salt according to your taste. Drizzle some olive oil on top and bake in your preheated oven for about 15 minutes.

Step 5

After this, set your oven to broiling mode and cook for another 5-10 minutes. After this, remove the pan from the oven slice up the chicken pieces to display the attractive colorful filling and serve hot with sides of your choice.
