Dumpling In Thai Style With Coriander Sauce

Recipe For The Spicy Dumpling In Thai Style:

Dumpling In Thai Style

Servings – 60 Dumplings

Ingredients Needed For The Filling Of The Dumpling:

• Ground pork – 1 pound
• Minced scallion – ¼ cup
• Minced red bell pepper – 1
• Minced peeled fresh gingerroot – 2
• Minced garlic clove – 1
• Minced cabbage – 2/3 cup
• Oriental sesame oil – ¼ teaspoon
• Soy sauce – 1 ½ teaspoon
• Finely chopped fresh coriander – 1 teaspoon
• Egg, beaten lightly – 1 large
• For dusting the baking sheet – cornstarch
• Shao mai wrapper, thawed if frozen – 60

Ingredient That Are Needed For Making The Sauce:

• Fresh lime juice – 3 teaspoon
• Fish sauce- 1 teaspoon
• Sugar for taste – 1 teaspoon
• White wine vinegar – 1 teaspoon
• Minced peeled fresh gingerroot – 2 teaspoon
• Shredded fresh mint leaves – 1 teaspoon
• Vegetable oil – 2 teaspoon
• Finely chopped fresh coriander – 1 teaspoon
• For garnishing – coriander sprigs

Steps That Are Needed To Prepare The Recipe:

Step 1

Take a large bowl and add scallion followed by pork, gingerroot, cabbage, oil, garlic, bell pepper, egg, soy sauce, coriander, salt and pepper. Mix all these ingredients well and place the filling in the refrigerator for about 1 hour or probably overnight.

Step 2

In this recipe, you need wrapper. Take one wrapper and put about 1 full teaspoon of the chilled filling in the center of it. Moisten the edges of the wrapper. This is done so that it does not open and the filling do not come out. You need to work on the edges of the wrapper and form a waist around it. Be very careful about the wrapper as it is going to give shape to the dumpling. Now you have to make the other dumplings in the same manner and after each is done, place on the baking tray that is lined with the sheet and wax paper that is further dusted with the cornstarch.

Step 3

You have to prepare the dumpling about 8 hour before you proceed ahead in cooking each. Once prepared, and lined in the baking tray, place aside uncovered and chilled. You can preserve these dumplings for about 1 month. However, you need to keep all covered tightly into the refrigerator. If you plan to use frozen dumplings, then do not thaw in advance.

Step 4

Now this step is all about making the sauce for the dumplings. You have to take a bowl and add the fish sauce, the vinegar, gingerroot, lime juice, sugar, coriander, mint, salt and pepper as per the taste. Whisk all these ingredients properly.

Step 5

Take a large non-stick pan and pour about 1 teaspoon of oil to it. The setting should be high for this. Fry the dumplings one at a time. Fry only half the total number of dumplings, each over high heat for about 1 minute or until the underside has turned golden in color. Now add about ½ a cup of water and steam each dumpling carefully. While steaming, the pan should be covered. Steam over the moderate setting for about 3 minutes or until you feel that the pork is cooked thoroughly. In case, you are using the frozen dumpling, then fry each for about 1 minute and steam in about ¾ cup of water for every batch. Steam covered for about 8 to 10 minute. Now add the remaining one teaspoon of oil to the skillet and do the same with the other dumplings as well. When the dumplings are all done, garnish with coriander sprigs and enjoy hot with the sauce.
