This is the easiest carrot cake recipe that is inspired from Brazilian style of carrot cake making. This cake requires easily available ingredients and requires very less utensils. It’s virtually mess free and almost healthy recipe. It yields a beautiful color without any food additives and does not require any frosting for it to taste better. It’s perfect companion to afternoon tea and post dinner dessert. You wont regret having a big piece of this healthy dessert.
Preparation Time: 10 Minutes
Cooking Time: 15 minutes
Orange carrot: 3 Medium
Eggs: 2 Large
Vegetable/ canola oil: 2 tbsp
Refined flour: 3 cups
Powdered sugar: 2 cupscarrot cake
Cinnamon powder: 1 tsp
Baking powder: 1 tsp
Vanilla Essence/ extract: 8 drops
Semi sweet Chocolate chips: 1 small cup
Preheat the oven.
Wash and peel the carrots. Cut then in medium sized dice. Take a big blender jar. In that, add the cut carrots, eggs and oil. Pulse all the ingredients on a high mode for 30 seconds. then, pulse in a low mode for a minute to froth the eggs properly. In a wide mixing bowl, add the refined flour. There’s no need to sift it as carrot cakes as dense cakes and are meant to be a little crumbly. Add separated powdered sugar and cinnamon powder to the flour. Now add baking powder to it.
Now, add the carrot, egg mixture to the flour mixture part by part. Fold the mixture gently to form luscious mixture. You can add a bit of whole milk if its too hard. Now add vanilla essence and chocolate chips to the mixture. Fold it in gently.
Grease a baking tray with a bit of oil. Pour the mixture and bake the cake for 15 minutes @ 170 degrees C. Since the cake is dense in nature, it will take time to bake. It will also feel the cake is baked but the interiors will feel raw. You need to keep on checking the cake by inserting a thin skewer. If it comes out clean, it is done. Let it still rest in oven for 2-3 minutes after you switch off the oven. Remove it and then cool and cut into pieces and relish it.
P.S: You can add a bit of frosting by preparing a ganache. Take a small bowl of chocolate chips and same amount of heavy cream. Now, take a small pan and heat the cream on low flame till it’s starts to melt. Switch off the flame and then add chocolate chips to it and mix it well. If it’s clumpy, put the mixture again on low flame n mix it then. Once you get an even mixture, remove from flame and spread it on top of the cake and let it set.
