The standard way of making ratatouille is using meat and then cooking it on the stove. But this is a quick and easier version for vegetarian that includes seasonal vegetables like squash and zucchini, which are easily available. Instead of cooking the vegetables in the pot, everything goes into the oven where it cooks for an hour or so and in turn you get a gratin that is high on flavour and taste – cooked with minimal fuss.
Here Is Your Vegetarian Ratatouille
Cooking Time – 1 Hour
Prep Time – 30 minutes
Serves – 4-5
2 teaspoons of extra virgin or even regular olive oil
4-5 big garlic cloves
2 zucchini either green or yellow
2 yellow squash or even 1 big pumpkin
1 red capsicum, tomato and onion each
1 big eggplant
2 Kilos of fresh tomatoes or either 2 cans of tomato puree
Herbs like oregano, basil or even thyme
Some bred crumbs
Cheese to grate on top
The first step to making the gratin is preparing your sauce. Ideally, if you are using the canned tomatoes, then there is not much fuss involved. If you are using fresh tomatoes, then peel and deseed them after blanching. Make it into a puree on cooling down and season with salt.
Being a one pot dish, there is no separate cooking involved here. For this, you have to chop all the vegetables into a round shape that should be more or less similar. So carrots, zucchini and squash can be rounded, while the eggplant can be halved first and then sliced to match this.
Spread out some tomato sauce on the bottom layer of an oven-proof pan. You can use both glass or aluminium based ones. Then sprinkle some garlic, salt and herbs on this. Now arrange your vegetables in a circular path, carrots, onions, eggplant, etc. Make sure to arrange all the vegetables stacked as closely as possible.
Pour the remaining sauce, garlic and herbs over this. Remember that a lot of this sauce will cook and get absorbed so don’t worry about the heap. Now cover with foil and bake at 180 degrees for about 30 minutes.
Now remove the foil, sprinkle bread crumbs and cheese and cook open without any cover for another 30 minutes or till it turns golden brown. Serve your vegetarian ratatouille hodelicious recipes
