Exotic Peri-Peri Chicken Recipe

A famous African delicacy, Peri-Peri chicken has found a strong fan base all over the world. A mouthwatering dish, it basically consists of grilled chicken marinated in an exquisitely flavourful spice mixture. The peri-peri sauce has a Portuguese origin and is very popular in African countries such as South Africa, Namibia, Angola and Mozambique.

Made with crushed red chillies or paprika, black pepper, lemon juice, onion and mixed herbs, it makes a fantastic marinade for the chicken. A traditional African dish, it is perfect for barbeques and can be served for dinner parties. With an accompaniment of fries, salads or flavored rice, peri-peri chicken is the perfect dish for special occasions.

Ingredients:

Chicken: 1 and ½ kilograms
Paprika powder: 1 teaspoon
Chilli powder: ½ teaspoon
Ginger: 1 teaspoon
Garlic: 1 teaspoon
Lemon juice: 2 tablespoon
Salt: to taste
Olive oil: 1 cup
Peri-peri sauce: 2 teaspoon
Black pepper: ½ teaspoon

Ingredients For Glaze:

Butter: 3 tablespoon
Garlic: 2 cloves
Lemon juice: 2 tablespoon
Chopped coriander leaves: a handful
Peri-peri sauce: 2 tablespoon

Method Of Preparation:

Step 1

To begin the peri-peri chicken recipe, you have to marinate the chicken with all the ingredients for at least 3 to 4 hours. Peri-Peri chicken is generally prepared with big pieces of meat and therefore, you have to cut a whole chicken into 4 pieces. Likewise, you can arrange for as many pieces you wish to take. Take a large bowl and marinate the chicken pieces with salt, paprika powder, black pepper powder, finely chopped or crushed ginger and garlic, lemon juice, ¼ cup olive oil, chilli powder and peri-peri sauce.

Step 2

Supermarkets generally sell peri-peri sauces and they are available in different heat levels. Very hot sauces are extremely spicy and choose this variety if you are extremely comfortable with handling hot chilli. The milder peri-peri sauce is a better choice if you are not affectionate about very hot food. Rub the chicken pieces very well with this marinade. Make sure that it is completely covered in the sauce. Let it marinate for at least 3 to 4 hours.

Step 3

Pre-heat a grill rack and roast the chicken pieces, turning them occasionally. Brush the chicken pieces with olive oil whenever you turn it around. This will keep the meat juicy and tender. The chicken should be brownish and slightly charred all over. Make sure that it dries up all the extra juice.

Step 4

The grilled chicken can be served with a dash of lemon juice, some fries and salad. However, a peri-peri glaze enhances its texture, taste and flavor. In order to make the glaze, heat butter in a sauce pan. Add some chopped garlic and saute for about 2 to 3 minutes until it turns golden brown in colour. Make sure that you do not burn the garlic. Add chopped coriander leaves, peri-peri sauce and lemon juice.

Step 5

Let the mixture simmer for 2 minutes. The glaze is now ready to be spread over the grilled peri-peri chicken. Use a brush to spread it all over the cooked chicken or drizzle it over the pieces just before serving. The sauce can be prepared earlier and can be stored in the refrigerator for a day. So, whenever you are planning a barbecue, make the glaze a day ahead and keep it ready. Just warm it before serving and it is ready to be used.
