4 flat breads
1 lb. of ground chuck roast
1 cup of cucumber, finely diced
1/4th cup of grated cucumber
1/4th cup of dry Italian breadcrumbs
½ cup of finely diced red onions
1 teaspoon of extra virgin olive oil
1 large sized egg
1 cup of Greek yoghurt
1 cup of finely diced tomatoes
1 tablespoon of minced garlic
1 tablespoon of fresh lemon juice
1 tablespoon of fresh dill
3 tablespoons of fresh Italian flat leaf parsley, chopped
½ teaspoon of ground cumin
1 teaspoon of minced garlic
1 teaspoon of sea salt
½ teaspoon of freshly cracked black pepper
To begin the preparations, take hold of a medium sized bowl and combine 1/4th cup of grated cucumber, Greek yoghurt, sea salt, fresh dill, extra virgin olive oil, 1 teaspoon of minced garlic, 1 tablespoon of fresh lemon juice and freshly ground black pepper in it. Once everything is added, combine them well with the help of a spoon, so that you get a smooth mixture. Taste and adjust the seasonings if needed and then pop the bowl into the refrigerator, until it is ready to be used again.
Now take a large bowl and place it on your kitchen counter. Also, set a preheating temperature of 425 degrees Fahrenheit on your oven to prepare it for baking. Fetch the bowl and add the ground chuck roast, 1 tablespoon of minced garlic, 1 egg, ½ teaspoon of sea salt, dry Italian breadcrumbs, 1/4th teaspoon of freshly ground black pepper, 2 tablespoons of chopped flat leaf parsley and ½ teaspoon of ground cumin. Mix all the added ingredients nicely with the help of your hand or a spoon. However; make sure that you mix the seasonings well, or else the patties will have alternating spots of unseasoned and seasoned patches.
Once you have mixed all the added ingredients nicely, take small amounts of the meat mixture and form them into small balls. Try to maintain uniformity of size for all the balls and you can use a scoop to measure the exact amount of meat mixture used for that purpose.
Once you are ready forming all the meatballs, take a cookie sheet or large baking tray and grease it generously with cooking spray or oil. Place all the meatballs gently in the baking tray and then pop the tray into the preheated oven. Bake the meatballs for about 10 to 15 minutes or until they are no longer pinkish in color and are cooked through.
While the meatballs are getting baked, take a serving dish and arrange the onion slices, diced cucumbers and the tomatoes in it. Top the vegetables with 1 tablespoon of chopped flat leaf parsley. Season the veggies with salt and ground black pepper, to taste.
Once you are ready with the meatballs, remove the baking tray from the oven and place it on the kitchen counter to allow the meatballs to get cooled down a bit. Now take another baking tray and line it with parchment paper. Adjust the flat breads in the baking tray and place the baking tray in the oven.
Adjust the oven to broiler and broil the breads for a few minutes turning them once or twice, until they are lightly toasted on all sides. Make sure that you keep a close watch on the breads to prevent them from burning.
Once you are ready with the flatbreads, remove the Tsatziki sauce from the refrigerator and place it on your kitchen counter. Now take the flatbreads and arrange three to four meatballs between each of the flatbreads. Spoon out a generous amount of the Tsatziki sauce over the meatballs and then top that with a spoonful of the vegetable salad. Wrap the sandwich and serve immediately.
