Fat free Greek yogurt: 2 tablespoon
Wholegrain Bulgur wheat: 50 grams
Smoked paprika: ½ teaspoon
Turkey breast: 175 grams
Garlic: 1 clove
Onion: 1 small
Lemon juice: from half lemon
Tomatoes: 2 pieces
Parsley: 2 tablespoon
Mint leaves: 2 tablespoon
Cucumber: 1 small

Method Of Preparation:

Step 1

To start the recipe, keep all the ingredients handy. Begin by crushing a clove of garlic. Finely chop the onions and tomatoes. Cut the cucumber into small cubes.

Step 2

Prepare a marinade for the lean turkey breast. Take a small bowl and combine zero-fat Greek yogurt, crushed garlic, paprika and some lemon juice. Season the mixture with salt and black pepper according to taste. Mix well and stir in the meat pieces. Coat all the pieces evenly with the prepared marinade.

Step 3

Line a baking tray with aluminium foil and arrange the turkey over it. Heat the grill and let it cook for 5 to 8 minutes, until it is soft and tender. You can also cook the meat on a grill pan. Heat a little bit of oil on a pan and sear the turkey on both sides until it is golden brown in color. It will taste as good as the grilled one.

Step 4

To prepare the wholegrain bulgur wheat, boil 2 cups of water in a large pan. Add the grains when water starts boiling. Turn off the flame and stir the bulgur. Season with some salt and keep it covered for 15 to 20 minutes. By this time, it will soak up most of the liquid and will double in volume. Remove any excess water that is left over. Fluff the grains with a fork and remove in a large mixing bowl.

Step 5

Let the grains cool down. Add the chopped tomatoes, onions along with cucumber cubes. Drizzle the remaining lemon juice over it and mix well. Chop some parsley and mint leaves. Scatter them over the salad bowl. Serve it with hot grilled turkey. This dish can be served as a hot or cold salad, depending on your preference. You can also keep it in the fridge for 2 days and serve later.
