Servings: 10-11 Rolls
Preparation Time: 30-35 Minutes
Cooking Time: 30-35 Minutes
For The Dough:
• 2 3/4th cups of all purpose flour
• 1/4th cup of full fat milk, at room temperature
• 2 1/4th teaspoons of instant dry yeast
• 1 large organic egg, at room temperature
• ½ cup of water
• 3 tablespoons of granulated sugar
• 3 tablespoons of unsalted butter
• ½ teaspoon of table salt
For the Filling:
• 1 ½ cups of fresh strawberries, chopped
• 1 ½ tablespoons of cornstarch
• 1/3rd cup of granulated sugar
For The Vanilla Glaze:
• 1 cup of confectioner’s sugar
• 2 tablespoons of milk
• 1 teaspoon of pure vanilla extract
Begin the preparation by preparing the strawberry filling first. For that, take the strawberries and chop off their tips. Throw the chopped strawberries in a saucepan and place that over medium heat. Cook the strawberries, stirring them constantly for about 6-8 minutes or until they start releasing their juices.
Once the strawberries turn soft and start breaking off, add the sugar and cornstarch. Continue cooking the mixture for another 1-2 minutes or until the mixture turns a little thicker. Once that happens, transfer the filling mixture to a bowl. Pop the strawberry filling mixture into your refrigerator and let it sit there until you are ready to use it.
While the filling mixture is sitting in the refrigerator, prepare the dough. For that, take a large mixing bowl and combine 2 1/4th cups of all purpose flour with the yeast, sugar and salt. Then take a saucepan and place it over medium high heat. Pour the milk into the saucepan and add the butter and the water to the milk. Whisk the mixture and cook it for a few minutes, until the butter completely dissolves into the milk. Make sure that you don’t heat up the milk too much; it should be warm to touch.
Once you are ready with the warm milk solution, pour it slowly into the dry ingredients flour mixture in the mixing bowl. Then add the egg and whisk the mixture again until it is completely consumed into the dough. Finally, add-in the remaining 1/4th cup of flour that you reserved earlier. Add more flour if needed. The dough should however have a slightly sticky, soft and elastic nature. Knead the dough with the heel of your palms for 3 to 4 minutes.
Transfer the dough into a greased bowl and cover the mouth of the bowl with a plastic cling film. Allow the dough to rest for 20 to 25 minutes. Once the resting time for the dough elapses, roll it out into a 14X8” rectangle. Then spread the chilled strawberry filling mixture all over the rectangle, leaving out 1 inch space all along the edges.
Once done, roll the dough into a cylinder, starting from one of the longer sides. Once you have completed the roll, let it sit over the seam for 5 to 10 minutes. Then slice the roll up into rounds. Once ready, transfer the slices to a lightly greased baking pan. Cover the baking pan with plastic cling film and place it in a warm spot to allow the rolls to rise up for 1 ½ hours.
Once the rolls have doubled up in size, bake them in oven, which has been preheated to 375 degrees Fahrenheit for 25 to 30 minutes or until their tops turn slightly brown in color. Rotate the pan after 15 minutes and cover the rolls with aluminium foil. Bake the rolls for an additional 10 to 15 minutes and then remove the baking pan from the oven.
To prepare the vanilla glaze, combine the confectioner’s sugar, cream and vanilla extract in a medium sized bowl. Whisk the mixture until it turns smooth. You may add a little bit more cream to loosen the consistency of the glaze. Once everything is ready, serve the rolls in serving platter and drizzle the vanilla glaze on top before serving.
