Here Is The Recipe Of Zucchini And Squash Burritos :
Preparation Time : 20 Minutes
Cooking Time : 40 Minutes
Serves : 6
Olive oil – 2 tbsp
Chopped onion – 1/2
Garlic cloves – 2
Shredded zucchini – 2
Shredded yellow squash – 1
Chopped bell pepper – 1/2
Black beans – 15 ounce (rinsed and drained)
Green salsa – 1 cup
Ground cumin – 1/2 tsp
Ground cayenne pepper – 1/2 tsp
Shredded Mexican cheese blend – 2 packages
Flour tortillas – 6 (Burrito size)
Preheat your oven to 350 degrees F. Grease a baking dish.
Take a large skillet and heat olive oil on medium heat. Cook the garlic and onions first. Wait for the onions to get translucent. This should take 5 minutes.
Put the zucchini, red bell pepper and yellow squash into the skillet with the onions and garlic. Let it cook for 10 minutes. Add the green salsa, black beans, cayenne pepper and cumin into the skillet. Cook till the filling starts to thicken. This should take 5 minutes.
Take one package of Mexican cheese blend and divide it among the tortillas. Now spoon the zucchini filling into each of the tortillas on top of the cheese. You need to spoon it in a line at the center. Roll the tortillas once you are done with the filling. Place this on the baking dish with seams facing down.
Bake these in the preheated oven till the cheese melts and the tortillas are properly heated. This should take 15 minutes.
Take the burritos out and sprinkle the other shredded cheese package over the burritos just before you serve! Your Zucchini and Squash Burritos are ready to serve!
