Ingredients Needed To Prepare This Recipe:

Buttermilk – ½ cup / 118 ml
Kosher salt – 1/8 teaspoon
All purpose flour – 1 ¾ cups and 220 grams
Baking soda – ½ teaspoon
Cold unsalted butter – 6 teaspoon and 85 grams
Heavy cream – ¼ cups + one teaspoon and 75 ml
Minute tapioca – 3 teaspoon and 36 grams
Raw sugar or turbinado – 3 teaspoons and 36 gram
Mixed fruits like peaches, blackberries and blueberries –  10 cups
Baking powder  – 1 teaspoon or 12 grams granulated sugar – 3 teaspoon to 2/3 cups or 38 to 133 grams
Granulated sugar – ¼ cups and 50 grams
Baking powder – 1 teaspoon and 12 grams

Let’s Go Through The Method Of Preparing This Recipe:

Step 1

Start with a parchment paper. When you get the parchment paper, place it a small but rimmed baking sheet or a large plate. Spread finely so that there remain no folds in the paper.

Step 2

In this step, you will be needing a food processor. Add baking powder, granulated sugar, salt and baking soda to the food processor and pulse for some time. Do add butter once you have pulsed all these ingredients. Pulse these ingredients till they resemble small pebbles type. After this, you need to add the cream, buttermilk and pulse once more for combining properly.

Step 3

You need to transfer all the mixture of the food processor on a floured surface. Make sure that the surface is not floured too much. Pat the dough once making sure that there remains no dry or stray pieces. With the help of a spoon scoop about 2-inch piece of the dough and give it the shape of the balls. Make about 10 balls using your hand. Shift the dough to the baking sheet or a platter and flatten each rolled balls making it about ¾ inch thick. Very carefully, you will wrap now with plastic and place in a cold place for at least 20 minutes or you can even prolong for about 8 minutes.

Step 4

In the meantime, you need to set the oven at 350 degree Celsius. Take a large bowl and add the fruit, tapioca and sugar to it. Allow it to place aside for about 20 minutes. This is done so that the tapioca hydrates.  After this, you can scrape a 9-13 inch of a baking pan or a 2 ½ quart of gratin dish.

Step 5

Now comes the last part before you finally take a step ahead in baking the recipe. This is the part when you will be giving final shape to the recipe. Yes, you will be decorating the dish with biscuits and about one teaspoon of cream. Here, you have the liberty to choose whatever cream or biscuit you want. Do sprinkle turbinado sugar on it and finally shift into the oven. Let the baking tray be there for about one hour or till you find that the recipe has turned dark golden in color. The fruit part in the centre should be bubbling. Allow the recipe to cool for another 30 minutes before you finally set to serve it. This completes your recipe. You can now serve it to yourself first and your near and dear ones.
