Kosher salt – 2 1/2 cups
Brown sugar – 2 1/2 cups
Crushed Juniper Berries – 2 tbsp
Crushed black peppercorn – 2 tbsp
Peeled and Sliced Ginger – 1 piece
Bay leaves – 4
Fresh Ham (skin on) – 1 (8 pound)
Peach preserve – 1 cup
Brown sugar – 1 cup
Dijon Mustard – 1/2 cup
Raspberry vinegar – 3 tbsp
Ground ginger – 2 tbsp
Fresh ground pepper
Method Of Preparation:
Firstly, you need to prepare the ham. Combine at least 2 gallons of hot water and add the salt, juniper berries, brown sugar, ginger, peppercorn and bay leaves. Use a pot to cook this and stir it till the sugar and salt dissolves completely. Let this brine cool down and place the cut ham in the prepared, cooled brine. Cover it and keep it in the refrigerator for 22 hours.
Keeping the ham overnight in brine will give you a lovely taste. Next day, preheat your oven to 450 degrees F. Remove ham and dry it completely. Use a strainer for the brine and reserve the spice.
Press the peppercorn and juniper berry on the prepared ham. Spread the bay leaves in a roasting pan. Now you need to place a cooking rack inside the pan. Place the ham on the rack and roast it for an hour. Reduce the temperature of the oven to 325 degrees and roast for 2 hours.
Now it is time to make the lovely glaze. Whisk the brown sugar, peach preserve, mustard, ginger, vinegar, pepper and salt in a bowl. Brush the prepared ham with this glaze. Continue to roast it till it turns golden. This should take about an hour. Turn the ham and use a thermometer to check the temperature of the center. It should read 155 degrees. The skin should be crisp. This will take 30 minutes or so.
Transfer the ham to a cutting board. Tent it using a foil and let it rest for about 20 minutes. Let it rest before carving it. Carve it and get to ready to make the sauce. Making the sauce is the final step.
Now, you need to skim fat of the ham from the pan. Discard bay leaves from the pan. Stir in order to make a yummy sauce. The final step is to carve the prepared ham and serve it with the delicious sauce.
