Hash Brown Potatoes With Creamy Exotic Seasoned Vegetables

If your kids don’t eat vegetables then this delicious hash brown potatoes recipe with cheese sauce makes a great combination. It is served with seasonal vegetables of your choice that is easy to serve and also hearty. It is a filling dish laden with the goodness of potatoes and cheese along with the health of fibres too.

Serves 4-5

Ingredients:

1 kg potatoes, make sure that these are new potatoes
2 tbsp grated cheddar cheese (You can also use 2 types of cheese except mozzarella)
Green chilies
2 tbsp each cornflour & butter
3 tbsp oregano
2 tbsp each cornflour & butter
You can also add spring onions.
200 gms butter
2-3 tbsp olive oil

Methods:

Step One

Wash & boil the whole potatoes with skin in an open pan in hot water for 5-7 mins. Cool, peel & grate it. Heat & add oil in a tava. Place some grated potatoes on it. Add grated cheese, green chilies & butter. Add oregano & let it cook.

Step Two

Take a small pan heat it. Put this pan inverted over the hash brown potatoes pan and take the hash brown potatoes on the other pan. Now slide the hash brown potatoes back on the original pan. Let it cook. Add some oil. Let it cook on a high flame till it becomes brown. Turn it over and let the other side also cook. When cooked Switch off the gas. Add salt.

Step Three

Take about 2 tbsp each cornflour & butter and 2 cups milk. You can also try and boil or infuse this milk with onion infused in bay leaf & clove. In the milk, add 1 onion slit into 2, place the bay leaf & clove in it. Boil the milk with these ingredients Let it cool to room temp. Just b’4 using discard the onion infused in bay leaf & clove.

Step Four

To this now add ½ cup Cheddar Cheese, Salt, pepper, oregano, little parsley. Finally, take 1 cup exotic vegs (coloured capsicum, blanched broccoli, & sautéed mushrooms. If very dirty, put mushrooms under tap water for ½ min & take it out / wipe it & cut into pcs. Sauté it on a high flame on a pan

Step Five

Heat butter in a not very hot pan as very hot pan will lead to burning & dicolouring of the butter and ruin of the sauce. Dissolve cornflour in some milk. Add it to the butter stirring continuously to avoid lumps. Add the rest of the milk the same way. This should be done on a low flame. Switch off gas. Taste & add salt & pepper. Stir well. Switch off the gas. Add the cheese. Add all vegs. Mix well. Add little parsley & oregano.

Step Six

Place the hash brown potatoes on serving dish (square plate). Add salt, cheese sauce & potato wafers on it. Place the 2nd hash brown potatoes on it. Add chips/wafers. On the sides add the sauces & vegs. Add herbs on top & sides.
